I've really gotten into Matcha lately. A little late to the party, I know. Since everyone (everyone!) is making Matcha everything these days.

To be brutally honest, I'm was never crazy about that sort "grassy" taste and was totally convinced the only reason people are so into it, is because it's trendy. It's the cool thing to do.

But if you take the time to actually do a little research, you'll find out that this stuff actually has amazing properties! From a high antioxidant content to jitter-free energy-boosting, Matcha can truly be considered a superfood.

So I started "forcing" myself to drink it and it definitely grew on me. Now I can use it in many different ways, without actually feeling like I'm a cow grazing in green pastures.

You can add it to your favorite baking recipes as we did here with these matcha waffles. Besides adding Matcha to the batter, they are made with chia and flax seeds, sweetened with bananas and a touch of maple syrup, a bit of coconut oil and blueberries. A great way to kick up your breakfast!

Description

Vegan Blueberry Banana Matcha Waffles, perfect breakfast or brunch to give your day a healthy start


Ingredients

  • 1 ½ cups whole wheat pastry flour
  • ¼ cup matcha
  • ¼ cup ground flax
  • 2 tablespoon chia seeds
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 ripe bananas, mashed
  • ¼ cup coconut oil, melted
  • 2 tablespoon maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon natural vanilla extract
  • 1 cup seltzer water
  • ¾ cup frozen blueberries


Instructions

  1. In a large bowl, combine flour, matcha, ground flax, chia seeds, baking powder, baking soda and salt
  2. In a medium bowl whisk together mashed bananas, melted coconut oil, maple syrup, vinegar and vanilla until well combined. Add to dry ingredients, mixing with a wooden spoon until just combined
  3. Add seltzer water and continue mixing until the ingredients are well incorporated. Fold in the blueberries and let the batter sit while the waffle iron heats up
  4. Generously coat the waffle iron with cooking spray. Spread about ¼ cup of batter per waffle can cook for 4-5 minutes (time might vary depending on your waffle iron)

    Very creative! I enjoy myself but I'm not as crazy about it as my sister, who basically loves any dessert with it! It's a great idea to tuck it into waffles, adding another level of goodness to the delicious fruit.

    What a creative way to use matcha! I am a big matcha (and matcha sweets) fan, but I know lots of people hate it... Sadly I cannot prepare green tea desserts for most of my guests.

    We made this last night and it turned out great! Matcha is great, and we just got interested in it too. It definitely has an earthy component that you have to get used to.
