Paleo Pear and Blueberry Crisp

This warm and comforting pear and blueberry crisp makes the perfect breakfast, snack, and even dessert! Nothing fancy or complicated, but it'll make your house smell as if you had been baking banana bread all day! No refined sugar added, vegan, gluten-free and grain-free.

What are the ingredients of our healthy blueberry crisp?

  • Apples
  • Pears
  • Blueberries
  • Bananas
  • Chia seeds
  • Almond flour
  • Shredded coconut

If you're making this blueberry crisp in the summer, you can replace the apples and pears for peaches and plums, and use fresh blueberries instead of frozen, if you prefer. We recommend always using bananas, wince we're not adding any refined sugars in this blueberry crisp, and they're needed for sweetness

Description

This warm and comforting pear and blueberry crisp makes the perfect breakfast, snack, and even dessert! It's not fancy or complicated, it almost makes you feel you are eating a slice of warm banana bread but without the guilt.  No refined sugar added, vegan, gluten-free and grain-free, so you can keep up with your healthy resolutions.


Ingredients

  • 1 medium apple, diced
  • 1 large bosc pear, diced
  • 1 cup frozen blueberries
  • 2 bananas, sliced
  • 1 tablespoon lemon juice
  • 2 tablespoon orange juice
  • 1 tablespoon chia seeds
  • ½ cup almond flour
  • ½ cup shredded coconut
  • 1 tablespoon coconut oil plus some a little extra to grease the ramekins, at room temperature
  • 1 tablespoon grade B maple syrup (you can also use raw honey), you can use more to taste if you wish
  • Coconut whipped cream (optional). For recipe, click here (omit sugar to make it Paleo friendly)


Instructions

  1. Preheat oven to 375F. Grease 4-6 ramekins (depending on the size) with coconut oil and place them on a baking sheet
  2. Combine diced apples, pears, blueberries and bananas in a large bowl. Add lemon and orange juice and chia seeds. Toss well and set aside
  3. In a medium bowl, combine almond meal, shredded coconut, coconut oil and honey or maple syrup. Mix well using a fork or your fingers
  4. Spoon fruit on greased ramekins and top generously with almond meal mixture
  5. Cover loosely with tin foil and bake at 375F for 20 minutes. Uncover and continue baking for 12-15 minutes until golden brown
  6. Serve warm with a dollop of coconut whipped cream

    I'm hating the cold weather too, and I suppose it's nowhere near as cold as the states where I live... but it is still so so cold. Running in the (filthy) snow feels terrible uuugh. Glad you had these fruit crisp to make up for it! They look fabulous! <3

    Fruits and seeds and nuts = YUM! So, seeing this is so healthy - maybe I could eat this instead of running in the snow? I think I would be one happy camper cooped up inside with a bucket - i meant - bowl of this crisp!

    I made something very similar to this and it was delicious. Unfortunately I ate it all before I could photograph it haha! Yours looks sublime and I like the addition of chia seeds (they are always welcome on my plate)

    I feel you! This weather is bringing out the "detester" in me, too 🙂 When it was +20 degrees, it WAS like a heatwave ... pathetic! This fruit crisp is anything but - all the fruit (bananas, blueberries and pears are so creative!) and the coconut puts it over the edge! Yum!

      We used bananas to add natural sweetness to the crisp, without adding extra honey.I wonder if you could use red grapes instead.
