Why You'll Love This Recipe

Roasted Green Beans are easy to make and use some of the season's best ingredients. Sweet caramelized cranberries are balanced by spicy red pepper flakes, while thyme and green beans lend the quintessential flavors of the holidays. Dukkah adds an extra special layer of savory, sweet, nutty, and zesty taste.

Ingredients 

  • Fresh Cranberries. Dusted with powdered sugar and roasted until they're soft and caramelized. 
  • Extra Virgin Olive Oil. 
  • Confectioners Sugar. Also known as powdered sugar. Cuts the naturally extreme tartness of fresh cranberries. 
  • Frozen French Green Beans. With frozen green beans, you can make this recipe year-round.  
  • Salt. 
  • Black Pepper. 
  • Red Hot Pepper Flakes. Adds a nice kick of heat to balance the sweetness.  
  • Dried Thyme. A classic fall and winter spice.  
  • Extra Virgin Olive Oil. 
  • Dukkah. Follow our recipe to make your own or use your favorite store-bought brand.  

How to Make Roasted Green Beans with Cranberries

  1. Step 1: Preheat oven to 375ºF, and line a baking sheet with parchment paper. Mix together cranberries, olive oil, and powdered sugar.

  1. Step 2: Spread the green beans on the prepared baking sheet. Add the remaining ingredients and toss to combine. Bake for 40 minutes, sprinkle with Dukkah, and serve.

Substitutions

Fresh Cranberries - fresh is best for this recipe as the cranberries will get caramelized, juicy, and sweet during roasting. You can toss in dried cranberries after roasting the green beans, but the flavor and texture will be different. 

Frozen Green Beans - Use fresh green beans when they are in season. Wash and trim before roasting. 

Red Hot Pepper Flakes - use as much or as little as you want according to your taste. If you don't like it spicy food, you can leave it out altogether.

Serving Suggestions

This is the perfect holiday side dish to serve alongside all your favorites.

Storage and Reheating

Leftovers can be stored in an airtight container in the fridge for up to 5 days. Reheat in a pan over medium heat on the stove for 5 minutes, until warm.

A Moment To Be Thankful

"I love you more than whipped cream and caramel". That's what my son said to me before going to bed when he was 7 years old. More than whipped cream and caramel! Coming from a 7-year-old, that's a very special thing to say, don't you think?

That sweet little moment made me realize how lucky I am. How many things do I have in my life to be thankful for? And how often we forget about them.

Since that night, I've made an effort to find something to be thankful for when I wake up in the morning. Amazing how that little, seemingly insignificant act, can change your entire day, completely.

I'll go first. Today, I'm thankful for my healthy, beautiful amazing little boy who fills my life with joy every day. And loves me more than whipped cream and caramel.

Description

Spice up your holiday table with these Roasted Green Beans & Fresh cranberries with Dukkah, that are quick and easy to make.


Ingredients

Units Scale
  • 1 cup fresh cranberries
  • 1 tbsp extra virgin olive oil
  • 1 tsp confectioners sugar
  • 1- 24oz bag frozen french green beans or fresh green beans
  • 1 tsp salt
  • ⅛ tsp pepper
  • ½ - ¼ teaspoon red hot pepper flakes (depending on your taste)
  • ½ tsp dried thyme
  • 2 tbsp olive oil
  • 3 tbsp Dukkah

Instructions

  1. Preheat oven to 375ºF. Line a large baking sheet with parchment paper
  2. In a small bowl, mix cranberries, 1 teaspoon of olive oil, and confectioner sugar. Set aside
  3. Spread green beans evenly on a lined baking sheet. Add olive oil, salt, pepper, and hot pepper flakes, mix well to coat. Add cranberries, salt, and toss well
  4. Bake at 375ºF for 30-40 minutes until done to your liking.  For fresh green beans check after 30 minutes.  Green beans should be slightly chewy, but not dried out. 
  5. Sprinkle Dukkah on top before serving

            Hi I have two small questions, do you thaw the green beans or put them on the baking sheet frozen and could you use 1 1/2 lbs of fresh green beans in place of the frozen bag?

              Place the green beans frozen on the baking sheet. You can use fresh green beans, the baking time may vary, so keep an eye on them in the oven.

        thank you so much for letting us know where to get the dukkah. I got it at Trader Joes it was in the spice dept and it was 2.99 for 3.3 oz.

            Hi I posted this a few weeks ago but i guess it never got on. I made this and it was so delicious got so many compliments. I used fresh green beans and no thyme or red pepper and it was fine so tasty thnks ruth and vicky

          The Thyme and the red hot pepper flakes gives the green beans some additional flavor, try using other spices that you like.

    hi vicky and ruth i know trader joes discontinued the dukkah a while back. just wanted to let you know they are making it again. I saw it and was so excited just had to let you know . now with cranberries in season i am making the roasted green beans wth fresh cranberries and dukkah
