Ingredients

  • Extra virgin olive oil. 
  • Fresh green beans (also called string beans). Washed and trimmed. Look for green beans that are crisp, bright green, and firm with no bruises.  You may also use haricots verts.
  • Garlic cloves. Lots of garlic infuse flavor in this side dish.
  • White miso paste.  This fermented soybean paste adds just a touch of savory umami flavor to the green beans.  You may use red or white miso.  Find miso in the refrigerated section of many supermarkets or an Asian specialty market. 
  • Salt. 
  • Black pepper. 

How to Make Garlicky Green Beans

  1. Step 1: Blanch the green beans in boiling water.

  1. Step 2: Plunge the green beans into an ice bath to stop the cooking process.

  1. Step 3: Sauté the garlic, green beans and miso.

  1. Step 4: Season with salt and pepper and serve.

Serving Suggestions

Serve these garlicky green beans as a side dish to your favorite dinner. Pair with vegan meatballs, mashed potatoes, mushroom gravy, vegan empanadas, or raw beet salad. 

Storage and Reheating

Leftover garlicky green beans can be stored in an airtight container in the fridge for up to 5 days. Reheat on the stove over medium heat until warmed through.

Description

Garlicky green beans are the perfect way to get your family excited about eating more veggies. This simple side dish will bring bright color to your dinner table and loads of garlicky goodness.


Ingredients

Units Scale
  • 1 tablespoon extra virgin olive oil
  • 1 lb fresh green beans, washed and trimmed
  • 4-5 garlic cloves, minced
  • 2 teaspoon white miso paste
  • 2 teaspoon boiling water
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Bring a pot of water to a boil with 1 tablespoon of salt
  2. While the water boils, prepare a large bowl with ice water and set it aside.
  3. In a small bowl mix the miso in 2 teaspoon of boiling water until creamy.  Set it aside.
  4. To blanch the green beans add them to the pot and boil for 3 minutes, using a colander drain the beans and transfer them immediately to the ice water bowl to stop the cooking process.
  5. Heat the olive oil in a large skillet, add garlic, cook for 2-3 minutes or until it starts to turn into a light golden color. Add the green beans and miso, mix, and sauté for 7 - 8 minutes until all the flavors are combined.  Taste the green beans and add salt and pepper to taste.
