Ingredients
- 1 tbsp extra virgin olive oil
- 1 lb fresh green beans, washed and trimmed
- 4-5 garlic cloves, minced
- 2 tsp white miso paste
- 2 tsp boiling water
- ¼ tsp salt
- ⅛ tsp black pepper
Instructions
- Bring a pot of water to a boil with 1 tablespoon of salt
- While the water boils, prepare a large bowl with ice water and set it aside.
- In a small bowl mix the miso in 2 teaspoon of boiling water until creamy. Set it aside.
- To blanch the green beans add them to the pot and boil for 3 minutes, using a colander drain the beans and transfer them immediately to the ice water bowl to stop the cooking process.
- Heat the olive oil in a large skillet, add garlic, cook for 2-3 minutes or until it starts to turn into a light golden color. Add the green beans and miso, mix, and sauté for 7 - 8 minutes until all the flavors are combined. Taste the green beans and add salt and pepper to taste.
