I want to thank you for posting the recipe for mushroom, zucchini, quinoa muffins. It has become a tradition that my son and I do the Breast Cancer walk in Philadelphia on Mother's Day and when we come home my husband has prepared one of your recipes. This year's was the best!!!!! I could not believe how delicious the muffins were. The real testimony comes from my 14 year old son who is a "veggiephobic". He was not interested in trying the muffin but one bite turned into finishing 7 muffins!!!! He now has a new breakfast that is actually healthy. The only problem is I will now have to make them. Thank you.
