What inspired this Hummus Recipe

On our last trip to Israel, we found constant inspiration for cooking at home. The country is filled with breathtaking scenery, bustling marketplaces, and of course...flavorful food everywhere you turn! One of the most popular dishes we saw being served was hummus topped with shawarma chicken. It was full of flavor, smelled incredible, and was an instant favorite of everyone who tried it! We came home and made this hummus recipe topped with sauteed Shawarma Mushrooms as a vegan alternative and it was even better than we imagined it would be.

What is Hummus?

If you’re unfamiliar with hummus you’re in for a real treat! It’s a creamy dip made from chickpeas (garbanzo beans) pureed with tahini (sesame paste), lemon, and your spices of choice. Hummus was first recorded as being made in 13th century Egypt, but it has origins all over the Middle East and in Mediterranean food. It’s delicious as a dip for pita bread or veggies, added into a wrap or falafel sandwich, or served over your favorite savory dish.

Health Benefits of Hummus

Since hummus is mostly made of chickpeas, it’s a really healthy way to get vegan protein in your diet. Chickpeas are also high vitamins, minerals, and fiber, so you can feel great about enjoying this delicious dip whenever you want!

Tips for the Best Homemade Hummus

Once you have a homemade hummus process down, it’s super simple! There are a few tips to keep in mind for the best-tasting version. Here’s what we’ve learned after years of making our own hummus!

  • Ingredients are important! Use good tahini. Our favorite brands are Soom, Al Arzi, Mighty Sesame and 365 Brand.
  • If your homemade hummus tastes bitter it’s probably because of poor-quality tahini or bottled lemon juice. Use freshly squeezed lemon juice for the best flavor!
  • If your hummus is too thick, add a bit of water or aquafaba. Aquafaba is the water you cooked raw chickpeas in, it's also the water found in the chickpea cans! This will make the creamiest hummus.
  • The creamiest hummus is made from soaked and cooked chickpeas, which is a fantastic option for this hummus recipe. For the quickest hummus, though, use canned chickpeas and the hummus will be ready in 5 minutes. Pulse it in the food processor until it’s smooth and creamy, it may take a couple of minutes. Add water one tablespoon at a time to get the consistency you like.

Homemade Hummus Without Raw Garlic.

Garlic is a traditional hummus recipe ingredient, but we actually make ours without it! Our mom is allergic, so she always omitted the garlic, and now we find that we don’t enjoy the lingering flavor. If you feel the same way you may prefer roasted garlic to raw! We have instructions on perfectly roasted garlic.

How to make homemade hummus

Homemade hummus is very quick and easy to make. Simply mix chickpeas, tahini, freshly squeezed lemon juice, salt, and water in a food processor and process until smooth and creamy.

What is Shawarma?

Shawarma is a traditional Middle Eastern street food that has gained popularity all over the world over the years. It's a heavily spiced and marinated piece of beef, lamb, chicken, or turkey placed on a rotation rotisserie stick, that continuously cooks the meat as the outer layers are shaved off, and usually served in a fluffy, pillowy pita bread pocket. As with any street food, no silverware is required! For a vegan option use jackfruit, mushrooms, or seitan.

How to Make Our Shawarma Mushroom Topping

Hummus Toppings

Classic hummus is topped with a drizzle of olive oil and a sprinkle of sumac or paprika. You could also top it with finely-chopped parsley, toasted pine nuts, shawarma chickpeas, or any of your favorite roasted veggies. We use a sprinkle of our Crazy Good Shawarma Spice Mix, which is what we sautéd the mushrooms for this recipe in!

Ingredients

Scale

For the Hummus

  • 1 - 15oz can of chickpeas, drained and rinsed- Save the liquid of the can of chickpeas 
  • ½ cup tahini 
  • ⅓ cup freshly squeezed lemon juice
  • ¼ tsp salt
  • ¼ cup of water or the water you saved from the can of chickpeas (also called Aquafaba)

For the Shawarma Mushrooms

  • 2 tbsp extra virgin olive oil
  • 1lb mushrooms of your choice, sliced
  • 2 tsp shawarma spice mix, homemade or store-bought
  • ½ tsp salt

Instructions

To make the hummus:

  1. Combine the chickpeas, tahini, salt, lemon and water or aquafaba in a food processor and process until smooth and creamy, at least 2 minutes.  Add more water, one tablespoon at a time, for a thinner hummus

To make the shawarma mushrooms

  1.  Heat the olive oil in a large skillet. Add the sliced mushrooms, shawarma spice and salt. Toss well until the mushrooms are coated with the spices
  2. Cook over medium-high heat for about 10 minutes, or until the water the mushrooms will release has cooked out completely
  3. Before serving, spread the hummus in a plate and top with shawarma mushrooms, a drizzle of olive oil and a pinch of the shawarma spice mix

Notes

  1. Make sure you process the hummus in the food processor for at least 2 minutes to get a really creamy hummus
  2. Taste the hummus and adjust salt and lemon to your taste
  3. Hummus and mushrooms can be made 3-4 days ahead. Just top the hummus with the shawarma mushrooms right before serving
  4. Always use good quality tahini and freshly squeezed lemon juice. Our favorite tahini brands are Soom, Al Arzi, Mighty Sesame, and 365 Brand.

    Can dried sliced mushrooms be used in this recipe after reconstituting them?

      Thank you! You could roast carrots or boil them and then sautée them in a skillet with olive oil and the shawarma spice mix.
