Avocado, Mango, Chili, Lime Tofu Tacos - Oil-Free, Vegan & Gluten-Free Perfect for breakfast, brunch, lunch, and dinner! Sweet mango, tangy onions, spiced tofu, creamy avocado, and crunchy tofu make these tacos simply irresistible.

Avocado, Mango, Chili, Lime Tofu Tacos - Oil-free, Vegan & Gluten-Free

This is an easy less than 30-minute recipe that is whole food plant-based, oil-free, vegan and gluten-free, that still packs tons of flavor.  Crumbling the tofu, coating it with spices and cooking it in a skillet for 5 minutes, infuses the tofu tacos with wonderful flavor from the spices.  Here we are seasoning the tofu simply with prepared chili powder, cumin, lime juice, and salt.  You may want to experiment with other spices like smoked paprika, chipotle powder, chili lime seasoning etc.

How to make tofu tacos

While the tofu is cooking in the skillet, prepare your toppings.  Today we choose to top our tofu tacos with:

  • shredded carrots
  • shredded jicama
  • fresh diced mango
  • quick pickled onions
  • cilantro
  • lime  
  • fresh sliced avocado

Other topping options for these tofu tacos may include:

  • Fresh or grilled pineapple
  • Guacamole
  • Shredded Cabbage
  • Pickled fennel

Once your toppings are ready you can start preparing the tofu. We have found that the best way to cook tofu to make it look like meat and to infuse impart the most flavor is to finely crumble it and add spices.  You can then cook it in a pan or bake it in the oven.  Tofu can also be eaten raw, but we prefer to cook it a bit.

Tofu is basically tasteless, the good thing about that is that is a blank canvas and it will absorb any spices or sauce that you may add to it.

You can be as creative as you want with these tofu tacos, for a really quick dinner prepare the onions and tofu ahead of time and these tofu tacos will come together in a flash. Enjoy!

Avocado, Mango, Chili, Lime Tofu Tacos - Oil free, Vegan & Gluten Free


Ingredients

Scale
  • FOR THE PICKLED ONIONS
  • 1 large red onion, sliced thin
  • 1 cup warm water
  • 6 tbsp red wine vinegar
  • ½ tsp salt
  • ½ tsp sugar
  • FOR THE TOFU TACOS
  • 1-12 oz pack super firm sprouted tofu or high protein tofu
  • 2 tsp chili powder (or to taste)
  • ¼ tsp to ½ teaspoon salt (to taste)
  • ½ tsp cumin
  • 2 tsp freshly squeezed lime juice
  • ½ large jicama, shredded
  • 3 -4 carrots, shredded
  • 2 Ataulfo mangoes ripe but firm, diced (or one large mango)
  • 1 Hass avocado, sliced
  • 1 bunch fresh cilantro, chopped
  • 6-8 gluten free tortillas or your favorite tortillas
  • 2-3 limes
  • Chili hot sauce to taste (optional)


Instructions

  1. Place sliced onions in a medium bowl. Combine warm water, red wine vinegar, ½ teaspoon salt and ½ teaspoon sugar in a separate bowl, mix well and pour over sliced onions. Cover and refrigerate until ready to use
  2. Using your hands or a fork, crumble tofu over a bowl. Add chili powder, salt, cumin and 2 teaspoons of lime juice and toss well. Transfer to a non stick skillet and cook over medium heat for 5 minutes, stirring frequently. Set aside to cool slightly
  3. To assemble the tacos, spoon crumbled tofu at the bottom of each tortilla and top with marinated onions, shredded carrots, jicama, mango, avocado and cilantro. Add a squeeze of lime and hot sauce to taste
