Ingredients for Homemade Gluten-Free Crackers

This recipe uses minimal ingredients that can be customized to your liking.

  • Gluten-Free Flour. We're using garbanzo bean flour in this recipe since we wanted to make a falafel cracker. See below for how to choose the best gluten-free flour for more ideas.
  • Spices. sweet paprika, cumin, coriander, turmeric, hot paprika, allspice, black pepper, cardamom. These are our falafel spices. See below for more flavor variations!
  • Salt. We use sea salt to bring all the flavors of these falafel crackers together. Adjust the amount of salt to your taste.
  • Extra Virgin Olive Oil. You can use any oil you have on hand.
  • Water. This helps bring the dough together. You can also use a plant-based milk.

Choosing the Best Gluten-Free Flour

This cracker recipe calls for garbanzo bean flour (aka chickpea flour), which yields a crunchier, more flavorful cracker that is higher in protein and fiber. Almond flour is another option that provides healthy fats and a more subtle flavor. You can use your favorite one-to-one gluten-free flour blend for baking. If the fact that these crackers are gluten-free is not important to you, use spelt flour, white flour, or a combination of white and whole wheat flour.

Keep your eye on the dough as you're mixing, and add water 1 tablespoon at a time to help the dough come together. Different types of flour require different amounts of water to bind.

What is Falafel Seasoning?

Traditionally, falafel is flavored with fresh parsley and cilantro, with a lot of bold dried spices. These warming spices give authentic falafel its signature flavor. We've included a 7-spice blend in the recipe card below to give these crackers that unmistakable falafel taste.

Flavor Variations for Homemade Gluten-Free Crackers

You can customize this gluten-free cracker recipe by using any spices or herbs available in your pantry. Which flavor variation will you make?

  • Salt and pepper
  • Za'atar
  • Sumac and sesame seeds
  • Flax seeds and sunflower seeds
  • Herbes de Provence
  • Italian seasoning
  • Nutritional yeast and chili powder
  • Grilling seasoning
  • Everything bagel seasoning
  • Mushroom powder

Description

Our gluten free crackers are quick, easy to make and totally irresistible. One bowl and a handful of ingredients are all you need! We chose a falafel spices for our flavor profile. Which one would you use?

Ingredients

Units Scale
  • 1 cup of garbanzo bean flour (here we used Bob's Red Mill ) (See Note 1)
  • 1 tsp sea salt or ½ tsp table salt
  • 1 tsp sweet paprika
  • ¾ tsp ground cumin
  • ¾ tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp hot paprika
  • ¼ tsp allspice
  • ⅛ tsp black pepper
  • Pinch of ground cardamom
  • 3 tbsp extra virgin olive oil
  • 2 tbsp cold water
  • 2 tbsp plant-based milk (or water if not available)

Instructions

  1. Preheat the oven to 375ºF
  2. Combine the flour and spices in a large bowl and mix well. Add the olive oil, water, and milk and knead to form a soft dough.
  3. Roll the dough between two pieces of lightly floured parchment paper, into a rectangle-ish shape, about ⅛ inch thick
  4. Score it into small rectangles (1"x1") using a pizza cutter or a sharp knife and prick each rectangle with a fork
  5. Carefully transfer it to a baking sheet and bake at 375ºF for 15 minutes.
  6. Let the crackers cool before separating them.

Notes

  • Alternatively, use regular white flour, a combination of whole wheat and white flour or almond flour instead of chickpea flour.  Please note that wheat flour is not gluten-free
  • You may need to add more or less liquid to form the dough with the different flours mentioned above.

This is the 2nd time I’m making these crackers. I love the flavor, but found both times even with flouring the parchment paper, the dough sticks badly. Thank goodness for pastry scrapers! Any suggestions? Thanks!

Hi Gita, we are so sorry you are having some trouble with our Falafel cracker recipe. We have not experienced that We would suggest spraying some oil on the parchment parper or adding a little bit more chickpea flour to the batter to see if that solves the problem.
