Apple cinnamon baked vegan donuts with a sprinkle of cinnamon sugar. A sweet breakfast to start your day with a good amount of energy!

These baked vegan donuts are super easy and quick to prepare. Unlike traditional fried donuts, this batter doesn't have yeast, so no need to let them rise. By baking them in a donut pan, they can be made all at once (rather than having to fry them one at a time), and the amount of fat required is obviously lower. They're light and airy, with a hint of cinnamon and juicy pieces of apple in every bite!

How Do You Make Baked Vegan Donuts?

Making baked vegan donuts is easy, once the dough is mixed and ready, just pour it into a greased donut pan and bake it for just 11 minutes. We highly recommend using a donut pan for this recipe and to make other baked donuts.

You can bake donuts without a donut pan by rolling some parchment paper or aluminum foil and placing it in the middle of each one of the cavities of a muffin pan and placing the dough around it. That's if you wish to go through the trouble...

Ingredients in Vegan donuts

  • Self Rising Flour: see the recipe card on how to make it at home
  • Flax Egg: you can use a regular egg, if not vegan
  • Coconut oil and GrapeSeed Oil: you can use any other neutral-tasting oil instead of grapeseed oil.
  • Apples: We used Granny Smith, but feel free to use any apple you have in hand

Glaze for Vegan Donuts

For our apple cinnamon donuts, we picked a cinnamon glaze, but you can also just dip them in cinnamon sugar. For the glaze you will need:

  • Coconut oil
  • Plant-based milk
  • Confectioner's sugar
  • Cinnamon

Description

Apple cinnamon baked vegan donuts with a sweet cinnamon glaze, a sweet breakfast to start your day with a good amount of energy!


Ingredients

Units Scale
  • 1 Flax egg (1 tbsp ground flax seeds mixed with 3 tbsp of water) or one large egg, if not vegan
  • 1 ¾ cup self-rising flour - See Note 1
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • Pinch of salt
  • 3 tbsp grapeseed oil (or vegetable oil)
  • 2 tbsp coconut oil, melted
  • ½ cup agave or maple syrup
  • ¼ cup light brown sugar
  • ¾ cup unsweetened cashew, almond, or coconut milk, lukewarm
  • 1 medium granny smith apple, core, peeled and diced small
  • 1 tsp vanilla extract (optional)

Optional Toppings

  • Cinnamon sugar ( sugar and cinnamon mixed together) to sprinkle on top

Cinnamon Glaze

  • 2 tbsp coconut oil, melted
  • 2 tbsp unsweetened plant milk
  • ½ cup plus 1 tablespoon confectioners' sugar
  • ½ tsp cinnamon or more to taste

Instructions

  1. Preheat the oven to 400F. Coat bottom of a donut pan with cooking spray
  2. In a small bowl, combine the ground flax seeds and water. Set aside
  3. In a small bowl combine the flour, baking powder, cinnamon and salt
  4. In a large bowl, whisk together the grapeseed and coconut oils, brown sugar and agave or maple syrup, until well combined. Pour the flax mixture and lukewarm milk and whisk well
  5. Slowly add the flour mixture and mix using a wooden spoon until just combined (do not over mix)
  6. Fold in the diced apples. Fill the donut mold ⅔ of the way and bake at 400F for 11 minutes
  7. Let the donuts cool and carefully unmold them using a butter knife to release the edges
  8. Dip them in cinnamon glaze, or brush donuts with a little melted coconut oil and dip them on a small plate with the cinnamon sugar.

To make the cinnamon glaze

  1. Whisk together the coconut oil and milk. Add the cinnamon and mix well
  2. Slowly add the confectioners' sugar, whisking constantly until it has dissolved completely

Notes

  1. You can make your own self rising flour by adding 1 ½ teaspoon of baking powder and ¼ teaspoon of salt to 1 cup of unbleached all-purpose flour

    These are the best tasting donuts I have ever eaten and best of all they didn't bother my stomach or make me feel gross afterwards as fried donuts often do. Great job, can I have some more???

      You could try using a non hydrogenated vegetable shortening or just grapeseed oil (the texture might change slightly though). Hope this helps!

    I just want you girls to know how much I appreciate what you do for all of us! I will be making these donuts this weekend for my mom. Anything cinnamon is okay in my world.
    But I will also be making your orange cranberry scones. Cranberries this time of year rule!
    Besides, you said you can make them round. which I have done on other scone recipes and make them more portable for me. I have your cookbook and love everything I have made. Especially the soups. Have a great holiday. I can't wait to see what you come up with in 2022!!!

    I just made these donuts. The batter tastes Yummy! They’re still in the oven, so I haven’t tasted them yet.
    Question- Can I keep the extra batter in the refrigerator for 5 days or can I freeze it and take it out in 5 days when my Gkids are here?
    It made a lot more batter than I thought.

      We've never tested freezing the batter, but we think it should be fine. It's preferable than keeping in the fridge for 5 days.

    These donuts are Yummy, even without any topping! It’s Monday and I made these to see how good they are. Since they’re delicious, I plan to freeze all but the 2 my husband and I tasted. Our grandkids will love this treat when they come visit this weekend.
