Vegan Chickpea Tacos

Even meat-eaters will absolutely love these Vegan Gluten-Free Chickpea Tacos! They’re a great addition to everyone's Taco Tuesday repertoire.

We've got vegan tacos over here! Bright, colorful, finger-licking, vegan, and gluten-free chickpea tacos will absolutely brighten your day. They’re loaded with cilantro and warming spices, creamy avocado, sweet corn, and juicy tomatoes. Use a corn tortilla, top them off with a garlicky yogurt cilantro sauce, and add a couple (or ten) of squirts of sriracha to make it even better.

Chickpea Taco Ingredients

This is one of the quickest, easiest weeknight taco meals out there. Once you have your ingredients these vegetarian tacos assemble in a snap!

  • Chickpeas - They add plant-based protein and are a fantastic base for your taco! We spiced the chickpeas with smoked paprika and cumin for really yummy vegan tacos.
  • Spices - smoked paprika, sweet paprika, cumin, and salt
  • Fresh chopped cilantro - You can use kitchen scissors to easily chop your cilantro into tiny pieces. If you are not a fan of cilantro you can use parsley instead.
  • Grape tomatoes - We like to cut each grape tomato in half so they fit into the tacos a bit better.
  • Shredded purple cabbage - It adds such a happy burst of color and crunch to vegetarian tacos. Cabbage also contains TONS of vitamin C as well as fiber and antioxidants!
  • Avocado - We squeeze a little lemon or lime on top to keep them bright and green once they’re diced! Avocados add healthy fats and dietary fiber.
  • Corn - Use fresh or frozen to add a touch of natural sweetness. 
  • Corn tortillas - This is how we keep these tacos gluten-free. Check your packaging to make sure they’re made with 100% corn flour.
  • Sriracha or Green Dragon Sauce - These hot sauces are optional, but perfect if you like a little bit of heat!

How to Make Vegan Tacos

Making vegan tacos is actually super easy. You don't need chicken or meat to have a delicious taco. Instead, you can use beans, mushrooms, tofu, edamame, cauliflower, or any other tasty plant-based options you like.

Today, we've got a yummy filling for you that's made with chickpeas and some delicious spices. It's packed with flavor and will totally satisfy your vegan taco craving. All you have to do is heat up a bit of olive oil in a non-stick skillet, add the chickpeas and spices, and cook them for a few minutes until they're nicely coated and smelling amazing.

Then, throw in some fresh cilantro, give it all a good stir, and let it cook for a few more minutes. And that's it!

We have the main part of our filling ready to go in the tortillas. But now it's time to work on the toppings. We're talking vegan sour cream, tomatillo salsa, cashew cream guacamole, cheese, pico de gallo, and whatever veggies you're in the mood for.

The sky's the limit when it comes to toppings, so go ahead and get creative. You can pile them high or keep it simple, it's totally up to you. Just make sure to load up on all the deliciousness so your tacos are bursting with flavor. Are you getting hungry yet?

More Vegetarian Tacos Protein Options

If you want to try a different base for your taco filling, you can use this same method with black beans! They taste differently than chickpeas but are just as delicious. You could even try a combination of the two! Other plant–based protein options are tofu or tempeh.

Vegan Sour Cream Taco Topping

Now, let's talk about the richness factor. You don't want your chickpeas to be too dry, so we've added some vegan sour cream to the mix. We made it ourselves with vegan yogurt, garlic, lime juice, and fresh cilantro, but our cashew cream would work great too. Trust us, don’t skip the creamy topping it's worth getting that creamy texture!

Vegan sour cream is the perfect addition to any taco! And the best part? It's so easy to make, and it's dairy-free, without sacrificing any flavor. The result is a creamy, dreamy sauce that will take your tacos to the next level.

But don't stop there. This vegan sour cream is so versatile, you'll want to add it to everything. Use it as a dip for veggies, drizzle it on top of baked potatoes, or add it to your favorite sandwich. Trust us, it's that good.

Description

Even meat-eaters will absolutely love these Vegan  Chickpea Tacos! A great addition to everyone's taco recipe repertoire 😉 Bright, colorful, finger-licking, these gluten-free tacos will brighten your day. 


Ingredients

  • 1-15.5 oz can organic chickpeas, rinsed and drained
  • 2 tsp extra virgin olive oil
  • ½ tsp smoked paprika
  • ½ tsp sweet paprika
  • ½ tsp cumin
  • ½ tsp salt or to taste
  • 1 cup fresh chopped cilantro ( set aside 2 teaspoon for the yogurt sauce)
  • 1 Large Hass avocado, peeled and pit removed
  • 1-1 ½ tablespoon freshly squeezed lime juice
  • ⅛-¼ teaspoon salt
  • 24 grape tomatoes sliced in half
  • 1 cup shredded purple cabbage
  • 1 cup corn kernels ( fresh or frozen)
  • 6 corn tortillas
  • Sriracha sauce to taste (optional)
  • Green Dragon Hot Sauce (optional)
  • YOGURT SAUCE
  • ½ cup vegan plain unsweetened yogurt. You may use Greek yogurt, if not vegan.
  • ⅛ - ¼ teaspoon salt (or to taste)
  • 1 clove garlic, grated
  • 2 tsp chopped cilantro
  • 2 tsp fresh squeezed lime juice

Instructions

  1. Heat olive oil in a large non-stick skillet. Add chickpeas, smoked and sweet paprika, cumin, and salt. Cook over medium heat for 2 minutes, stirring often so the chickpeas are well coated with the spices. Add cilantro, toss well and continue cooking for another 3 minutes. Set aside
  2. Mash the avocado with 1-1 ½ tablespoon freshly squeezed lime juice and ⅛-¼ teaspoon salt. Mix it until smooth
  3. To prepare the sauce, whisk all the ingredients together until well combined. Refrigerate until ready to use
  4. To assemble the tacos, spread the mashed avocado on each tortilla. Add the chickpea mixture, tomatoes, cabbage, and corn. Drizzle with yogurt sauce and sriracha or green dragon sauce, if using.

Notes

  1. If you don't want to use the spices listed in the recipe you can use prepared chili powder or chili lime seasoning.
  2. If you don't have veggies in your fridge, simply add salsa
  3. Want a more traditional veggie topping? Use red onions, lettuce, tomatoes, and cheese.
  4. Cotija cheese is an option and feta cheese gives a nice briny flavor.  You can find good vegan feta cheese on the market these days.
