Pizza crust from cauliflower is the perfect blend of flavor, crispiness, and sturdy surface area as flour-based crust substitute can possibly be. Our recipe for cauliflower pizza crust will surprise you and make the perfect pizza you didn't think you could have.

Ingredients for Cauliflower Crust

  • Frozen Cauliflower Rice. This is an easy recipe you can use in so many different dishes! You will need about two cups per crust, and it needs to be thawed. The rice can be made in a food processor or using a box grater.
  • Grated Parmesan Cheese. The level of salt in parmesan cheese varies greatly, so this ingredient can be adjusted as needed to control the salt level.
  • Dry Oregano.
  • Garlic Powder.
  • Black Pepper.
  • Sea Salt.
  • Egg. Used as a binder for the crust, the egg will work best in the absense of water, so it is essential that you remove as much excess water from the cauliflower rice as is possible.

How to Make Cauliflower Pizza Crust

Preheat your oven first and make sure to line your pan with parchment paper. Your cauliflower rice should be completely thawed. Squeeze out the excess water using a clean dish towel.

Mix the cauliflower rice with the parmesan cheese, oregano, garlic powder, and black pepper in a medium mixing bowl. Then add the egg and mix again.

Form an eight-inch crust with raised edges on the parchment paper. Bake this for twenty minutes or so. Cover the pizza with your toppings of choice and bake it again until those toppings are cooked through and the cheese is melted. It will take about ten minutes.

Using Frozen Cauliflower for Pizza Crust

The best way to make this delectable crust is to start with our cauliflower rice. This recipe works great with frozen store-bought cauliflower rice but it needs to be thawed first to form into a crust. You may use homemade cauliflower rice instead, but you will need to microwave it or steam it slightly before forming cauliflower pizza crust.

Our vegetarian Cauliflower Pizza uses the following toppings. Of course, you can use any toppings you like, but we do recommend you try this combination. It's so yummy!

  • Mozzarella Cheese
  • Goat Cheese
  • Cumbled Sheep's Milk Feta Cheese
  • Sun Dried Tomatoe Strips packed in oil
  • Oregano
  • Optional garnish: fresh oregano or fresh basil

How to Freeze Cauliflower Pizza Crust

Bake the crust for this low-carb pizza crust first. Then go ahead and add cheese and other toppings.  Place the cauliflower pizza on a flat plate, carefully wrap it with aluminum foil and place the plate in a freezer bag.  Freeze for up to a month.  When ready to enjoy the cauliflower pizza, remove the freezer bag and wrap. Place cauliflower pizza on a parchment paper-lined baking sheet and bake for 10-15 minutes or until the cheese is bubbly.

How do I reheat cauliflower pizza?

The cauliflower crust pizza can be re-heated in the microwave, or at 250ºF in a toaster oven or regular oven.

Tips and Tricks for the Best Cauliflower Crust Pizzas

  1. If using fresh cauliflower rice, homemade or store-bought,  you will need to cook it for 4  minutes in the microwave before mixing the rest of the ingredients.
  2. Depending on how salty the Parmesan cheese is, you can add salt or skip it.

Ingredients

For the cauliflower pizza crust

  •  12oz frozen cauliflower rice, thawed (about 2 cups) (See Note 1)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dry oregano
  • ½ teaspoon garlic powder
  • ⅛ teaspoon black pepper
  • ¼ teaspoon sea salt (optional)
  • 1 egg

Ingredients for the cauliflower crust pizza

  • ¾ cup shredded mozzarella cheese
  • 1 tablespoon goat cheese
  • 2 tablespoon crumbled sheep's milk feta cheese
  • 1 tablespoon sun dried tomatoes strips packed in oil
  • 1 teaspoon dry oregano
  • Optional garnish: fresh oregano or fresh basil


Instructions

  • Preheat the oven to 400F.  Line a large baking sheet with parchment paper
  • Make sure the cauliflower rice is thawed.  Squeeze as much water as possible out of the cauliflower rice. Place it in a bowl, add the parmesan cheese, oregano, garlic powder, and black pepper.  Mix well, taste it, add salt if needed (See note 2)
  • Add the egg and mix really well
  • Place the cauliflower mixture on the parchment paper and form an 8" circle making the edges of the cauliflower pizza crust a little higher than the crust (See image in post)
  • Bake the crust for 20 minutes. Remove the baking sheet from the oven, but leave the oven on
  • Sprinkle the mozzarella cheese on top, place little dollops of goat cheese and feta cheese around the pizza crust
  • Add the sun dried tomatoes and sprinkle with dried oregano
  • Return the baking sheet to the oven and bake for an additional 10 minutes. Serve immediately

Notes

  1. If using fresh cauliflower rice, homemade or store-bought,  you will need to cook it for 4  minutes in the microwave before mixing the rest of the ingredients.

    This pizza is absolutely delicious and the frozen riced cauliflower makes it so easy. My husband was shocked to find out that the crust was cauliflower. This recipe is a winner!!

    Is there an egg-free way to make this pizza? I’m not sure that a flax egg would work as well. Maybe aquafaba?

      I would try adding some potato starch or tapioca startch to hold it together.

      You can replace the Parmesan cheese with almond flour seasoned with salt and pepper or use nutritional yeast. Let me know if you have any other questions.
