  • Here we go. Feeling good! Let' do this!
  • Brr... I should have worn more layers. I can't feel my fingers.
  • Ugh, why did I wear so many layers? I'm already sweating.
  • I should have bought the expensive arm band.
  • Why are these headphones shocking my ears? I should have bought the expensive ones.
  • Coming through, out of my way please!
  • Am I the only one who sees the "stop for pedestrians" sign? Thanks a lot for stopping!
  • Why haven't I hit a mile yet? Is my tracker not working?
  • Ok finally. First mile. What? That can't be my pace, I was flying!
  • Ugh not this song again.
  • What are you looking at? You've never seen anyone running before?
  • It's ok sir, no need to look at what's in front of you while you're about to turn. You can just run me over, take me out of my misery
  • Why is my nose running non stop?
  • Ugh, forgot the tissues again. Will anyone see me if I blow my nose on my sleeve? I don't care, I'm going for it.
  • Ooooooh! Starbucks!!
  • Ouch. I should have worn my knee sleeve.
  • Why am I doing this again?
  • Pancakes. As soon as I get home.
  • Ok half way there. 5 miles to go.
  • Ugh, not this song again (skip, skip, skip).
  • Can you PLEASE GET OUT OF MY WAY??
  • Why am I doing this again? Oh yeah, pancakes.
  • Come on Siri, talk to me. Where's my next mile?
  • Did I just swallow a bug? I'm pretty sure I just swallowed a bug. Gross (spit, spit, spit.... did anyone see that?).
  • What flavor pancakes do I want?
  • 3 miles left, almost there. But I have to pee, ugh. Will anyone see if I wet my pants a little?
  • How have I not hit the 9th mile yet? My tracker is definitely not working
  • Why am I doing this again?
  • PANCAKES, PANCAKES, PANCAKES, PANCAKES, PANCAKES.
  • DONE. Can't wait to do this again!

Crazy uh? They say running is nothing more than a series of arguments between the part of your brain that wants to stop and the part that wants to keep going. Which is true for pretty much everything in life, isn't it? All we need is something to motivate us to keep going. Like, pancakes!

I literally made these the minute I walked in the door from my long run. And somehow I managed to keep them clean and nutritious. And super fast too, thanks to the pack of pre cooked Love Beets I had in the fridge 😉

Description

Beet and pumpkin pancakes topped with juicy pomegranates.  Make your breakfast a little healthier today with these super foods pumpkin pancakes!


Ingredients

Scale
  • 1 large cooked beet (here we used Love Beets)
  • ½ cup canned pumpkin
  • ¾ cup unsweetened non dairy milk (here we used So Delicious coconut milk)
  • ¼ cup maple syrup
  • 1 tsp natural vanilla extract
  • 1 cup whole wheat pastry flour (here we used Bob's Red Mill)
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ⅓ cup chopped walnuts
  • Toppings
  • Pomegranate seeds
  • Maple syrup
  • Non dairy yogurt ( We used So delicious)


Instructions

  1. Combine the cooked beet, pumpkin, milk, maple syrup and vanilla in a blender. Process until smooth
  2. In a large bowl, combine flour, baking powder, baking soda, cinnamon and salt and mix well. Pour beet mixture and mix until just incorporated. Add chopped walnuts and mix again
  3. Using a paper towel or a pastry brush, lightly coat the bottom of a skillet with oil (you can also use cooking spray). Place on the stove over medium low heat
  4. Pour about ¼ cup of batter per pancake, spreading them slightly to for approximately 5 inch pancakes. Cook one and a half to two minutes per side. Serve warm with your favorite toppings

    I handed the print out of this recipe to my husband and he made it for me on the Christmas Eve morning. I loved it very much. The beautiful red color pancake made so festive!

    How many grams or ounces of beets should I use? The Love Beets package contains 8 oz. I have very small beets.

      We would use about 4 of the small beets for this recipe.
