What is shown does not reflect what is written in the recipe. All the greens in the recipe are ground into a paste and then cooked. The photo shows a dressing with bits of green leafy material. So what is the green leafy material? Does this in any way taste similar to a conventional bread stuffing? Looks interesting.

Thank you for your question. We garnished the Cauliflower stuffing with some parsley, it is totally optional.

We just sprinkled some parsley on top for some added freshness.

This recipe is my new favorite way to eat cauliflower. So delicious!! And it actually tastes like stuffing to me! I am gluten-free and usually make the gluten-free stuffing from a box but it is neither tasty nor nutritious. I'm glad to have a healthier, tastier dish to serve this year! Thanks, as always!!

Hi Leah, leaving out the thyme rosemary and mint will make the cauliflower stuffing blend, so try to substitute with other herbs and spices. We think this stuffing may get too mushy since it cooks really fast, so we would recommned serving it on the side.
