Nope, it's not grilled cheese month yet. That would mean we're in April, and it definitely doesn't look like it, or feel like it, out there, as we're waiting for the first "official" Nor'easter to arrive tonight. As if we needed anything to be "official" to let us know how much this winter stinks. Sigh...
Official or not, big, messy, annoying, paralyzing snowstorms always call for one thing: comfort food. And growing up in our household, nothing screams "comfort" louder than crunchy bread and cheese. Now take that dynamic duo, fancify a little bit, and you'll take comfort to a whole new level.
And our friends at "Les Petites Fermieres" and Joy of Kosher are giving us the perfect chance to do just that. Crunchy bread, creamy goat cheese, nutty gouda, wild mushrooms, and crispy apple. Add a touch of grain mustard, and there you have it. Perfection.
So go ahead winter storm Pax. Bring it on. You're just giving us another excuse to indulge in delicious food 🙂

- 1 -8 ounce pack of mushrooms, sliced
- 1 tbsp extra virgin olive oil
- ¼ tsp salt
- ¼ tsp garlic powder
- ⅛ tsp pepper
- 1 apple, sliced very thin
- 1 tbsp grain mustard per sandwich
- 2 slices of sandwich bread per sanwich
- 2 ounces gounda cheese, sliced or shredded, per sandwich
