Vegan Open Faced BLT Grilled Cheese. That’s probably not a phrase you hear or think of often, but it is definitely one we’ve had swirling around for the last several days. Why? April is grilled cheese month!
Being us, we couldn’t let the month pass us by and rely on simple vegan grilled cheeses. Get bread, get vegan cheese, then prepare – Boring!
Our recipe is a savory, vegan open faced BLT grilled cheese. Having trouble imagining a vegan version of that? Well, you don't have to.
Think of it as a delicious combination of avocado toast, a traditional grilled cheese, and a vegan version of the BLT sandwich. (If your mouth isn’t watering yet, it should be. This might just be the perfect vegan sandwich!)
We put together this mouthwatering sandwich using the cheesy, melty goodness of GO VEGGIE vegan Shreds, shredded lettuce and tomato for a touch of freshness and avocado to make it rich and creamy. Instead of using a store bought bacon substitute for the “B” in our BLT, we added smokey Portabella mushrooms. They resemble bacon more than some of the other tools in our culinary toolbox, and their flavor can’t be beaten when combined with the more neutral flavor tones of avocado and vegan Shreds.
And to make it even better, this grilled cheese has zero cholesterol and less calories and saturated fat than the dairy cheese and bacon version. and it can easily be made gluten free simply by using your favorite gluten free bread.

Unfortunately Go Veggie is hard to get ahold of where I'm at, I love their cheeses but have to fake my own quite often. I subbed a melty vegan mozzarella fake I make with cashews, tapioca flour and nutritive yeast flakes (and some more things) and doubled the mushrooms, and it was heaven indeed on some King Arthur gluten free bread from the box mix.
