Description
These Low Carb Vegan Protein Crackers are a great on the go post workout or mid day savory snack, for when you're not in the mood for something sweet!
Ingredients
Scale
- ½ cup water
- 3 tbsp ground flax seeds
- ½ cup unsweetened vegan protein (4 scoops)
- ½ cup unsweetened shredded coconut
- 3 tbsp sesame seeds
- 1 tbsp chia seeds
- ¼ tsp salt
- 1 tbsp coconut oil, melted
Instructions
- Preheat the oven to 300F. Line an 11x8 inch baking sheet with parchment paper and coat it lightly with cooking spray
- Combine the water and ground flax seeds in a small bowl. Mix well and set aside
- In a separate bowl, combine the protein powder, shredded coconut, sesame and chia seeds, and salt and mix well, Add the melted coconut oil and flax mixture and mix well until all the ingredients are well incorporated
- Grease your hands lightly and spread the cracker mixture on the parchment paper as evenly as possible (the mixture will be sticky, so grease your hands again if you need to). You can score the dough using a sharp knife if you want even-sized crackers. Bake for 1 hour
- Keeping the oven on, remove the tray and flip the crackers onto the tray. bake for another 15 minutes. Let them cool completely before breaking them

Here we used an unsweetened vegan protein powder by Orgain. Most Whole Foods carry it, and can be easily found online on Amazon or Vitacost.

I just made this recipe. I'll keep you posted. I hope it does not taste coconuty.. My hubby does not like coconut. I did not tell him the ingredients. I am doing the Wegsn keto.. Is this Keto friendly.. I hope.. I did not get how thick I was supposed to roll them. But since is a cracker I made it cracker thickness
