Gluten Free Banana chocolate ice cream sandwiches

Turning your favorite coffee shop into your own little office certainly has many advantages. Like, unlimited amounts of coffee of course, no rent, being constantly surrounded by other human beings and best of all, being able to meet your girlfriends for a quick coffee at any given time.

Like today for example, when I met my friend Kelly and brought a couple of our “Banana Whip” Ice cream sandwiches for her to try.

As I stepped away for a couple minutes to get us some coffee, I came back to this written on my screen…

“I used to work at a camp in a small town in New Jersey. On the weekends there were catering events and often ice cream.

Usually I’d indulge in an ice cream sandwich, then after work was done, pass out in a shady spot near the lake in an ice cream induced coma.

Needless to say, those were my heavier days. Now, I still occasionally want to go into an ice cream binge fest, but rarely want the guilt hangover for the following week. I don’t want to squeeze my imaginary belly in the mirror and call myself fat. I don’t want to run at the park imagining being chased by ice cream on legs!!

While I really enjoy running and exercising, I also really hate getting up in the morning to do it.

Where was I going with this….oh yeah. When Ruth had me try one of her “ice cream” things, it turned into two. Then three. Then an ice cream headache. Followed by a few more.

I think she knows me too well, otherwise she wouldn’t have brought as many as she did that day. Jerk.

A childish grin on my face. A twinkle in my eyes. Banana ice cream on my face and hands. I was in love with ice cream again.

I demanded she leave the coffee shop immediately and to take those things back where they came from.

She found something for me to love eating and not feel guilty about it afterwards. The little sandwiches brought me right back to the shady spot by the lake.

Needless to say, using frozen bananas as a sort of instant ice cream is pretty neat. I just make the banana part and put it in a bowl and eat it via spoon with Nutella. I know my way is a little lazy and unhealthier, but that’s between you and me.

Description

This almost-guilt-free, kid friendly treat is perfect on a warm summer day and super easy to make! The gluten free cookies add the chewy consistency you expect from an ice cream sandwich!


Ingredients

Scale
  • 3 frozen bananas
  • 6-12 store bought gluten free cookies (here we used 6 Udi's Snickerdoodle cookies sliced in half)
  • 6 tbsp chocolate chips
  • 1 tsp coconut oil


Instructions

  1. Line a large plate or tray with wax or parchment paper. Spray lightly with cooking spray
  2. Place frozen bananas in the food processor and pulse until you achieve a creamy, ice cream like consistency(see note)
  3. Spoon frozen banana mixture between 2 cookies (or one sliced in half if you're using thick ones), smoothing out the edges with a spatula. Place sandwiches in the freezer to set
  4. In the meantime, melt chocolate chips and coconut oil in the microwave, stirring every 15-20 seconds to make sure the chocolate doesn't burn
  5. Spoon melted chocolate over half of each sandwich, place them on the lined plate and freeze until ready to eat

Notes

You can also use a cool little gadget called Yonanas to whip the frozen bananas! For a vegan alternative, try Lucy's Cinnamon Thin Cookies!

    Could this work with the frozen banana sandwiched in rice cakes or tortilla chips?

      Absolutely! But our suggestion would be to eat it right away after assembling, since both the rice cakes and tortilla chips will get soggy in the freeze. Hope this helps!

    I opened up the freezer today and saw these ice cream sandwiches. I decided to just take a bite and then return them neatly into the freezer. Well, that didnt work out so well.....i took a bite expecting some real rich, heavy ice cream sandwich but instead i got this light, refreshing, bananay sandwich. It was delicious and i ended up eating the whole thing! I just got a "banana whip" machine so i will be making these all the time now for a delicious but healthy summer treat! Thanks for sharing this recipe! 🙂
