Description
This almost-guilt-free, kid friendly treat is perfect on a warm summer day and super easy to make! The gluten free cookies add the chewy consistency you expect from an ice cream sandwich!

- 3 frozen bananas
- 6-12 store bought gluten free cookies (here we used 6 Udi's Snickerdoodle cookies sliced in half)
- 6 tbsp chocolate chips
- 1 tsp coconut oil
Instructions
- Line a large plate or tray with wax or parchment paper. Spray lightly with cooking spray
- Place frozen bananas in the food processor and pulse until you achieve a creamy, ice cream like consistency(see note)
- Spoon frozen banana mixture between 2 cookies (or one sliced in half if you're using thick ones), smoothing out the edges with a spatula. Place sandwiches in the freezer to set
- In the meantime, melt chocolate chips and coconut oil in the microwave, stirring every 15-20 seconds to make sure the chocolate doesn't burn
- Spoon melted chocolate over half of each sandwich, place them on the lined plate and freeze until ready to eat
Notes
