A few days ago, one of my co-workers asked me what my dream job would be. My answer was that, if I could spend my entire day in the kitchen creating and experimenting with recipes, I would be extremely happy.  Then I explained to him how Vicky and I started "May I have that recipe" and what we do. He looked both surprised and impressed!

Of all the fun things we do here with our blog, I would say that, what we call "recipe makeovers", are my favorite thing to do. I love to take traditional recipes and give them a twist: vegan, vegetarian, dairy free, light... You name it, I do it. And I thoroughly enjoy the process.

I came up with this recipe one afternoon, when I was really craving one of my very favorite desserts: pumpkin pie. I could have made it. I could have bought it. But honestly, the calorie conscious personal trainer/nutritionist in me didn't allow me to. Instead, it forced me to look for a lighter, protein packed, more nutritious, definitely faster alternative.

Using some Greek Yogurt I had at home, courtesy of our friends at Chobani, some always-present-in-my-pantry canned pumpkin and ginger snaps I had brought from work, this little treat satisfied my craving and left my belly surprisingly full!

And if you would like to try your own makeover and make it an even lighter treat, try substituting stevia for the sugar and maple syrup... and if you're one of those sweet/salty combination lovers, like I am, try it with with some crushed up Pretzel Crisps on top. The variations are endless! Feel free to post yours 🙂

Ingredients

Scale
  • 2 cups plain non fat Greek Yogurt ( we use Chobani)
  • 2- 15oz cans pumpkin puree
  • 2 tbsp water
  • 4 tbsp dark brown sugar (we use Wholesome Sweeteners Organic Dark Brown Sugar)
  • 5 tbsp maple syrup
  • 3 tsp pumpkin pie spice (or to taste)
  • 16 ginger snaps, crushed
  • 8 tbsp chopped pecans

Instructions

  1. Whisk together yogurt, and pumpkin puree.
  2. In a small bowl, mix water and brown sugar until dissolved. Poor into pumpkin mixture, add maple syrup and spice and mix well
  3. Spoon into 8 bowls, reserving 8 tablespoons. Top with crushed ginger snaps, 1 tablespoon of pumpkin mixture and 1 tablespoon chopped pecans per bowl

    I have that job (in the kitchen making new recipes) and it is so good (except for the wreck of my hands and the constant need to shower and wear "cooking clothes")! So I know what you mean. This pumpkin mousse looks wonderful and we love Chobani here.

    I've made this before, but without the gingersnaps - what a smart addition! Greek yogurt and pumpkin puree are two of my favorite ingredients to bake, or "no bake" 🙂 with. Pumpkin pie is one of my favorite splurges, but I love this lighter option! Thanks for sharing!

    Oh my, I can close my eyes and feel the texture on my tongue and taste the tang of the yogurt along with the sweetness of the pumpkin and maple. The pecans are just perfect on top.

    That would be the be the best dream job ever! I don't think I can do it but I love to eat so that would be a plus. I love how healthy and yummy this recipe is! Gosh that pumpkin has a lot of color 🙂

    Wow this sounds delicious and easy on the hips - it is quite fun to play with recipes - I sometimes feel I could spend all day in the kitchen (except after a day in the kitchen when I am usually quite exhausted)

    I made this last night and am thinking the 3tbsp of pumpkin pie seasoning might actually be more like 3tsp--since mine got gritty and tasted way overseasoned. So my advice to others would be tomake sure and season to taste instead of measure and dump like I did. 🙂 Otherwise, I'm sure the recipe would've been delicious!
