Vegan, Gluten Free Cookie Butter - Fast and easy to make with only 4 easy ingredients
There's nothing we like more than a challenge, you should all know that by now. Especially, when it comes to desserts, and especially when it comes to trendy products.
And what's the latest sweet stuff everyone is crazy about these days? Cookie butter. It's like the non chocolate version of Nutella, right?
Well... We hate to say it but, just like (most) awesome things, store bought cookie butter has its downside:
- For starters, if you keep kosher, a kosher certified brand is not easy to find
- If you have a gluten intolerance, this is definitely off limits
- The ingredients list? Just a bit too long for our liking
And let's be honest, isn't home made always better anyway? Especially when it's SO easy?
Our home made version of cookie butter has only 4 ingredients and can be made in 2 simple steps.
For the cookie part of the spread, we chose Home Free Mini Vanilla Cookies . Free of the 8 most common food allergens and certified gluten free. They also are low sodium, low glycemic, and have no trans fat or cholesterol. Certified a good source of whole grain, certified kosher parve, certified vegan, and certified organic (70% organic ingredients). But most of all, absolutely delicious!
Now for the "butter" part. Most recipes we found called for some kind of heavy dairy product: heavy cream, condensed milk, etc. Our goal was to find a dairy free product with similar consistency, also lower in saturated fat and cholesterol free. Just so we could make it not only vegan and gluten free, but also heart friendly. So we made our own "cream" by whisking together GO VEGGIE Vegan Cream Cheese Alternative and unsweetened vanilla non dairy milk. Pretty ingenious, uh?
We blended it all together and done! Sounds good, doesn't it? Give it a try and we can pretty much guarantee you will fall in love with it.

Ingredients
- 2 cups Home Free Vanilla Mini Cookies
- 2 tbsp brown sugar
- ⅓ cup GO VEGGIE Vegan cream cheese alternative
- 3 tbsp unsweetened vanilla non dairy milk
Instructions
- Place cookies and sugar in the food processor and pulse until finely ground
- In a medium size bowl, combine vegan cream cheese and non dairy milk. Slowly whisk until smooth an creamy
- Add cream cheese mixture to the ground cookies. Pulse in the food processor until desired consistency (chunky or smooth). Keep refrigerated.

I made this for my husband, and it was out of this world good!! Since finding out that all of our children are allergic to gluten, dairy and eggs, life has been different.
