Vegan Spinach "Paneer"

Ingredients

- 1 tbsp vegetable oil
- 1 large sweet onion, diced (about 2 cups)
- 2 cloves garlic, minced
- 1 lb frozen spinach, thawed
- ½ tsp turmeric
- ½ tsp salt
- â…› tsp pepper
- ¾ cup coconut milk (we used So Delicious Culinary Coconut Milk)
- ¼ cup water
- ½ tsp grated ginger
- ½ tsp Aleppo pepper or red pepper flakes
- 1 tsp agave
- 7 oz firm tofu, diced
Instructions
- In a large deep skillet, saute onion and garlic in vegetable oil over medium for 5 minutes, stirring often. Add spinach, turmeric, salt and pepper and cook for another 5 minutes
- Add coconut milk, water, grated ginger, Aleppo pepper and agave and mix well. Continue cooking for 5 more minutes
- Gently place diced tofu on top of spinach and cook for 3-4 minutes
