Ingredients

  • 1 tbsp vegetable oil
  • 1 large sweet onion, diced (about 2 cups)
  • 2 cloves garlic, minced
  • 1 lb frozen spinach, thawed
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 3/4 cup coconut milk (we used So Delicious Culinary Coconut Milk)
  • 1/4 cup water
  • 1/2 tsp grated ginger
  • 1/2 tsp Aleppo pepper or red pepper flakes
  • 1 tsp agave
  • 7 oz firm tofu, diced

Instructions

  1. In a large deep skillet, saute onion and garlic in vegetable oil over medium for 5 minutes, stirring often. Add spinach, turmeric, salt and pepper and cook for another 5 minutes
  2. Add coconut milk, water, grated ginger, Aleppo pepper and agave and mix well. Continue cooking for 5 more minutes
  3. Gently place diced tofu on top of spinach and cook for 3-4 minutes
