Cheese Stuffed Mushroom Veggie Burger

We've talked many times about how big of an influence our mom has been for us when it comes to cooking. Best cook ever in our eyes. Watching her every day in the kitchen not only taught us pretty much everything we know today, but was also where our passion for cooking started.
She can cook pretty much anything without using one single recipe. No measurements, nothing. And the most amazing thing is that she never tastes or eats any of the food she makes.
Her everyday diet consists of pretty much 6 foods: bread, cheese, olive oil, vegetables, fruit and chocolate.
But her favorite, by far, is cheese.
We recently discovered a new line of cheese by a brand called Sincerely, Brigitte. We received a few samples of their different flavors a couple of weeks ago and we fell in love immediately. All the flavors are beautifully infused into the cheese. They're bold and assertive. And the combinations are just delicious. Absolutely amazing! The cheese is mild and creamy, made with premium rBST-free milk sourced from only small Wisconsin dairy farms and using non-animal sourced microbial rennet and starters and all natural vegetarian ingredients. And it's also certified kosher!
For today's recipes we used their Wasabi flavored cheese. Sharp and slightly spicy, melts beautifully inside the veggie burger, making it rich and decadent.
Give them a try and we guarantee you won't be disappointed.

Enjoy!

Description

You will not miss the meat in this mushroom veggie burger stuffed with this out of this world wasabi cheese.

Ingredients

Scale
  • 1 large sweet potato, diced
  • 2 tbsp extra virgin olive oil
  • 3 large portabella mushroom caps, chopped
  • 3 scallions, sliced
  • 1 large zucchini squash, grated
  • 2 large carrots, grated
  • 1 cup rolled oats
  • ½ cup frozen shelled edamame, thawed
  • 2 tbsp arrowroot powder (you can also use corn or potato starch)
  • 2 tbsp mustard (here we used spicy brown, but you can use your favorite)
  • Juice of 1 lime
  • ½ tsp salt
  • 1oz Sincerely Brigitte Wasabi Cheese per burger ( 6oz total)
  • 6 hamburger buns
  • Fixings: sliced tomato, lettuce, mustard, etc

Instructions

  1. Boil diced sweet potato in salted water until very tender, about 10 minutes. Drain well, mash it with a fork and set aside to cool
  2. In the meantime, heat 1 tablespoon of olive oil in a large non stick skillet. Add chopped mushrooms and scallions and cook over medium heat for about 2 minutes. Add shredded carrots, zucchini and a pinch of salt. Continue cooking for another 6-8 minutes
  3. Transfer to a large bowl a let cool for a few minutes. Add oats, mashed sweet potato edamame, arrowroot powder, mustard, lime and salt. Mix well and transfer to a food processor. Pulse a few times, until it all comes together
  4. Using your hands, form 12 patties (2 patties will make 1 burger)
  5. Slice each ounce of cheese in 3 pieces and arrange them over 6 of the patties. Top each one with the remaining patties, pressing the edges well so the cheese is sealed inside
  6. Cook on a large non stick skillet with one tablespoon of olive oil, over medium low heat, 5 minutes per side, until the patties are golden brown and the cheese is melted

This sounds delicious! I have tried so many cheese stuffed meat burgers, it's never occurred to me to try that with a veggie burger! I can't wait to have a go at this!

Oh, ladies! These look absolutely fantastic! Honestly, they sound terrific even before that gorgeous cheese is tucked inside, but that gooey-yummy, creamy goodness really hits it out of the park! So intrigued by the wasabi flavor, too - absolutely perfect for my spice-loving guys! Great step-by-step method shots on how to enclose the cheese and form the patties! Another fantastic post - always excited to see what unique ideas you're working on! 😀

Oh these look great! Do you think they freeze well? It'd be ideal to be able to make ahead and then stick in the oven or pan on a busy weeknight.
