Roasted Green Beans With Fresh Cranberries & Dukkah

“I love you more than whipped cream and caramel”. That’s what my son said to me before going to bed a few  nights ago. More than whipped cream and caramel! Coming from a 7 year old,  that’s a very special thing to say, don’t you think?

That sweet little moment made me realize how lucky I am. How many things I have in my life to be thankful for. And how often we forget about them.

Since that night, I’ve made an effort to find something to be thankful for when I wake up in the morning. Amazing how that little, seemingly insignificant act, can change your entire day, completely.

And since the timing seems perfect for it, how about we share those thoughts with you over the next postings along with our Thanksgiving and Hanukkah recipes?

I’ll go first. Today, I’m thankful for my healthy, beautiful amazing little boy who fills my life with joy every day. And loves me more than whipped cream and caramel.

Roasted Green Beans With Fresh Cranberries & Dukkah

Ingredients
  • 1 cup fresh cranberries
  • 1 tsp vegetable oil
  • 3 tbsp confectioners sugar
  • 1- 24oz bag frozen french green beans
  • 1 tsp salt
  • ⅛ tsp pepper
  • ½ - ¼ tsp red hot pepper flakes (depending on your taste)
  • ½ tsp dried thyme
  • 3 tbsp olive oil
  • 3 tbsp Dukkah

Instructions
  1. Pre-Heat oven to 375F. Line a large baking sheet with parchment paper
  2. In a small bowl, mix cranberries, vegetable oil and confectioners sugar. Set aside
  3. Spread green beans evenly on lined baking sheet. Add olive oil and mix well to coat. Add cranberries, salt, pepper, hot red pepper flakes and thyme and toss well
  4. Bake at 375F for 30-40 minutes
  5. Sprinkle Dukkah on top before serving

      Trader Joes sells Kosher Dukkah. O-U parve certified.

            Hi I have two small questions, do you thaw the green beans or put them on the baking sheet frozen and could you use 1 1/2 lbs of fresh green beans in place of the frozen bag?

            Place the green beans frozen on the baking sheet. You can use fresh green beans, the baking time may vary, so keep an eye on them in the oven.

        thank you so much for letting us know where to get the dukkah. I got it at Trader Joes it was in the spice dept and it was 2.99 for 3.3 oz.

            Hi I posted this a few weeks ago but i guess it never got on. I made this and it was so delicious got so many compliments. I used fresh green beans and no thyme or red pepper and it was fine so tasty thnks ruth and vicky

          The Thyme and the red hot pepper flakes gives the green beans some additional flavor, try using other spices that you like.
