This manchego grilled cheese with romesco sauce is Spain in a grilled cheese sandwich. Sharp and nutty manchego cheese gets enhanced by the sweet and tangy homemade romesco sauce. If you are ready for a change, we dare you to try this amazing manchego-romesco combo!

Over the past few days, Iโve spent an awful lot of time thinking about the summer. Yes, I do realize that we still have a few months till we get thereโฆ and no, itโs not because this winter has been just plain awful.
Itโs because of some not-so-good news I just received. My dear niece just informed us that she will not be working as our โinternโ this summer.
Cโmonโฆ Seriously?? What 17 year old wouldnโt jump at the opportunity to spend all summer with her aunt, sitting at a coffee shop doing workโฆ for hoursโฆ. in 90-degree weatherโฆ getting paid nothingโฆ. Oh, waitโฆ Okโฆ She may have a point thereโฆ
But anyway, it doesnโt matter. The thing is, we canโt afford to lose her. She did an amazing job for us last year. Helped us tremendously. But most importantly, she kept me company all summer. Sounds totally selfish on my part, I know, but itโs the truth.
I have to find a way to make her change her mind. Itโs bribing time I supposed... Maybe, since she LOVES Romesco, I'll start by offering to make her this Manchego grilled cheese sandwich every single day and go from there...
Any other suggestions?? Feel free to share ๐
Enjoy!

Could I maybe move in with you on the evenings you are planning to make these? These and a few other things on your site. But, we can start with these. Fabulous!

Thank you so much! It is worth it to make a big batch of romesco and use it on roasted vegetables, fish or just as a dip with crusty bread.
