Description

Are you a pumpkin spice lover? Do you also love coffee? Then this breakfast recipe is for you. With these Pumpkin Spice Latte Overnight Oats Recipe, you can have your PSL and eat it too!


Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 cup unsweetened non-dairy milk
  • 3 tbsp maple syrup (or to taste)
  • 2 tbsp chia seeds
  • 2 tsp hemp seeds
  • 1/4 cup brewed coffee
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 cup old fashioned oats
  • 1/2 cup coconut yogurt or Greek yogurt

Instructions

  1. In a large bowl, combine pumpkin, non-dairy milk, coconut yogurt, maple syrup, chia and hemp seeds, coffee, pumpkin pie spice and cinnamon. Mix well
  2. Add oats, cover and refrigerate overnight
  3. Scoop into individual containers for a grab-and-go breakfast.

  3. You may add chopped apples or nuts right before eating.
