Passover Golden Milk Cashew Cheesecake Bites. Vegan, refined sugar and gluten free and perfect for Passover!


Ingredients

  • For the golden milk cream:
  • 3/4 cup raw cashews
  • 3/4 cup warm unsweetened vanilla almond milk
  • 2 tbsp almond butter
  • 1 tbsp maple syrup
  • 2 tsp grated fresh ginger
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • For the crust:
  • 1/4 cup shelled pistachios
  • 1/4 cup unsweetened shredded coconut
  • 3 Medjool dates
  • 1/4 tsp cinnamon
  • 1 tsp orange zest (optional)

Instructions

  1. Combine the cashews and warm almond milk in a bowl and let them soak for 30 minutes
  2. Transfer them to a high power blender or a Nutribullet, add the almond butter, maple syrup, ginger, turmeric and cinnamon and and blend until smooth. Refrigerate until ready to use
  3. To prepare the crust, combine all the ingredients in the food processor and pulse until well combined
  4. Serve the cream on spoons topped with the crust, or layer them in small cups
