Goat Cheese Corn and Pear Cups

Ingredients

  • 2tsp salted butter
  • 1 Bartlett pear diced
  • 1/2 ornagic canned corn
  • 1/8 tsp salt
  • 1/8 chopped dried rosemary
  • 1/8 tsp pepper
  • 15 Phyllo dough cups
  • 3 tbs goat cheese
  • 2 tbs milk
  • 1 egg
  • pinch of salt and pepper

Instructions

  1. Pre-Heat oven at 350F
  2. Melt butter in a pan
  3. Add pear, corn, rosemary, salt and pepper
  4. Cook at medium heat for 8-10 minutes until corn and pear start to caramelize
  5. While the pear and corn are cooking mix in a bowl goat cheese, milk and a pinch of salt and pepper.
  6. Mix well until you it becomes creamy
  7. Add beaten egg
  8. Add cooked pear and corn
  9. Add about 1 tbs of mix to each phyllo dough cup
  10. Bake at 350F for 15 minutes or until cup edges become golden brown
  11. Serve warm
