Description

Chocolate and Peanut butter mousse is an absolutely delicious and decadent healthy-ish dessert that's vegan and gluten-free. Check out some of our other chocolate recipes.


Ingredients

Scale
  • Chocolate layer
  • 2oz unsweetened chocolate
  • 1/4 cup unsweetened coconut milk yogurt (here we used So Delicious)
  • 1 tbsp maple syrup (or to taste)
  • 1/4 cup vegan whipped topping (here we used So Delicious Cocowhip), thawed
  • PB layer
  • 2 tbsp all natural salted peanut butter
  • 1/4 cup unsweetened coconut milk yogurt (here we used So Delicious)
  • 1 tbsp maple syrup (or to taste)
  • 1/4 cup vegan whipped topping (here we used So Delicious Cocowhip), thawed
  • Berries for garnish (optional)

Instructions

  1. For the chocolate layer:
  2. Melt the unsweetened chocolate in a heat proof bowl (you can do this over a double boiler or in the microwave at 20 second increments, stirring each time)
  3. Whisk in yogurt and maple syrup ( don't worry if little bits of chocolate solidify, it's actually better if that happens!)
  4. Gently fold in whipped topping until well incorporated. Refrigerate while you prepare the peanut butter layer
  5. For the peanut butter layer:
  6. Whisk together peanut butter, yogurt and maple syrup
  7. Gently fold in whipped topping until well incorporated
  8. Layer chocolate and peanut butter mousse in two glasses or bowls. Garnish with berries (optional)
