Description
Homemade pesto layered with thick juicy slices of tomato and fresh slices of mozzarella finished with a drizzle of balsamic glaze on crusty bread makes this the perfect Caprese Sandwich.

- 1 large tomato, sliced
- 6 Fresh Mozzarella Cheese Slices
- 1/2 cup Pesto Sauce, homemade or store-bought
- A couple of drizzles of Balsamic Glaze
- 2 Ciabbata rolls, toasted or as is (see note 1)
Instructions
- Start with homemade pesto on both sides of your bread.
- Next, layer sliced tomato and sliced mozzarella.
- Add a drizzle of balsamic glaze to your sandwich for the perfect pop of flavor contrast.
- Finish it off with freshly ground coarse black pepper if you like, and your upscale sandwich is ready to go.
Notes
1. You can use any crusty bread such as baguette, Italian bread etc.
2. The recipe is for two sandwiches. If you want to make more sandwiches here are the ratios:
Use 1/2 a tomato per sandwich
Spread 2 tbsp of pesto per sandwich. 1 tbsp on each bread slice
3 slices of fresh mozzarella cheese per sandwich
A Drizzle of balsamic glaze, to taste
