Description

This Summer Caprese Salad uses tomatoes, mozzarella, balsamic glaze, and fresh basil to create a salad that is as simple as it is delicious. It’s just right for backyard barbecues, picnics, or potlucks. There are never any leftovers! People can’t get enough of this bright vegetarian salad.


Ingredients

Scale
  • 8 fresh mozzarella slices or more  if making for a larger crowd - Make it vegan by using vegan mozzarella.
  • 2 large tomatoes of different colors of available and a few multicolor cherry or grape tomatoes
  • 2 tbsp extra virgin olive oil
  • salt and pepper to taste
  • A few basil leaves
  • 1-2 tbsp balsamic glaze (optional)

Instructions

  1. Slice tomatoes
  2. Arrange tomatoes and mozzarella slices in a plate of platter
  3. Drizzle with olive oil, salt, pepper and balsamic vinegar
  4. Serve topped with fresh basil leaves
