- 2 tbsp olive oil
- 1 large sweet onion, thinly sliced
- ¼ tsp salt
- 1 medium granny smith apple, peeled and diced small
- 1 tbsp dark brown sugar
- 2 tbsp agave nectar, maple syrup or honey
- 2 tbsp balsamic vinegar
- 1 tbsp freshly squeezed lemon juice
Instructions
- Heat the oil in a large skillet. Add the onions and salt and cook over medium heat for 5 minutes, until translucent. If the onions start to stick to the pan, add 1 tablespoon of water at a time to prevent them from burning
- Add the diced apple and continue cooking for 5-6 minutes
- Add the brown sugar, agave, balsamic vinegar, lemon juice, and 2 tablespoons of water. Stir well and cook for more 2 minutes
- Reduce the heat and simmer, uncovered, for 20 minutes until the apples are soft and the onions caramelized, stirring occasionally
