If you can't find purple asparagus in the market, the green variety works just as well in this recipe. There is barely any difference in taste and texture.
Asparagus Salad with Blue Cheese and Goji Berries

- 1 bunch thick purple asparagus, washed and cut into 2 inch pieces*
- 1 pear (any kind), diced
- 2 tbs crumbled blue cheese
- 1 tbs Goji berries (we use Navitas Naturals)
- ¼ tsp salt
- 1 tbsp extra virgin olive oil
- 1 tbsp freshly squeezed lemon juice
- *Note: You can substitute green asparagus if you can't find purple
Instructions
- Boil asparagus in salted water for about 4 minutes. Drain and place in a bowl with ice water
- Remove asparagus from ice water, drain and arrange in a small platter. Add diced pear, top with crumbled blue cheese and Goji berries. Season with salt and drizzle with olive oil and lemon juice

To easily cut the asparagus, bend the spear several times until you find a place where it snaps easily and discard the hard stem at the bottom
