Asparagus Salad with Blue Cheese and Goji Berries

Ingredients

  • 1 bunch thick purple asparagus, washed and cut into 2 inch pieces*
  • 1 pear (any kind), diced
  • 2 tbs crumbled blue cheese
  • 1 tbs Goji berries (we use Navitas Naturals)
  • 1/4 tsp salt
  • 1 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • *Note: You can substitute green asparagus if you can't find purple

Instructions

  1. Boil asparagus in salted water for about 4 minutes. Drain and place in a bowl with ice water
  2. Remove asparagus from ice water, drain and arrange in a small platter. Add diced pear, top with crumbled blue cheese and Goji berries. Season with salt and drizzle with olive oil and lemon juice
