Vegan Caesar Dressing

Ingredients

  • 1 cup boiling water
  • 1/2 cup raw cashews
  • 1/4 cup lemon juice (about 1 large lemon)
  • 1/4 cup nutritional yeast
  • 1 garlic clove
  • 2 tbsp rice vinegar
  • 2 tbsp tamari sauce or liquid aminos
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
  • 1/4 tsp black pepper (or to taste)

Instructions

  1. Soak the cashews in 1 cup of boiling water for 30 minutes. After the 30 minutes have passed, drain and rinse the cashews. 
  2. To prepare the dressing, we recommend you use a high-speed blender or smoothie maker. Combine the soaked cashews,  1/3 cup of water, and the rest of the dressing ingredients in the blender and blend until smooth. Refrigerate until ready to use.
