- 1 cup boiling water
- 1/2 cup raw cashews
- 1/4 cup lemon juice (about 1 large lemon)
- 1/4 cup nutritional yeast
- 1 garlic clove
- 2 tbsp rice vinegar
- 2 tbsp tamari sauce or liquid aminos
- 1 tsp dijon mustard
- 1 tsp maple syrup
- 1/4 tsp black pepper (or to taste)
Instructions
- Soak the cashews in 1 cup of boiling water for 30 minutes. After the 30 minutes have passed, drain and rinse the cashews.
- To prepare the dressing, we recommend you use a high-speed blender or smoothie maker. Combine the soaked cashews, 1/3 cup of water, and the rest of the dressing ingredients in the blender and blend until smooth. Refrigerate until ready to use.
