These tahini, turmeric and date vegan granola bars, are naturally sweetened and perfectly spiced. They make for a great grab and go breakfast or snack

  • 2 cups gluten free oats
  • 1/3 cup maple syrup
  • 3 tbsp tahini
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp ground ginger
  • 1/4 tsp coriander
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 6 pitted dates, chopped
  • 1/4 cup shelled pistachios, chopped
  • 2 tbsp sesame seeds

  1. Preheat oven to 350F. Spread oats on a large baking sheet and place in the oven for 8 minutes, until lightly toasted. Set aside to cool
  2. Combine maple syrup, tahini and coconut oil in a small sauce pan. Cook over medium heat for 5 minutes. Remove from heat, add vanilla extract, turmeric, cinnamon, cardamom, ginger, coriander, salt and black pepper and mix well. Add dates and set aside to cool slightly
  3. Combine oats, pistachios and sesame seeds in a large bowl. Pour maple syrup and tahini mixture over, mixing well using a wooden spoon or your hands and making sure the oats are well coated
  4. Spray the bottom of an 8×8 inch baking dish with cooking spray. Place parchment or wax paper over it and press it down so it sticks well to the bottom and sides
  5. Transfer oat mixture to the lined dish and press it down using your hands (the more you press it down, the better the bars will hold together). Refrigerate for at least 3 hours and cut into bars
