Description

Vegan sweet and sour eggplant vegetarian side dish with crunchy pomegranate seeds


Ingredients

  • 1 large eggplant, cut in large cubes
  • 4 cloves of garlic, grated
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp hot paprika
  • 1/2 tsp cumin
  • 1 tbsp agave nectar
  • 3 tbsp pomegranate molasses
  • 3/4 cup water
  • 1 cup of fresh pomegranate seeds
  • basil or parsley for garnish

Instructions

  1. Steam eggplant for 10 minutes (you can also boil it for about 15 minutes)
  2. In a large deep skillet, sauté garlic in olive oil over low heat for 2-3 minutes
  3. Add steamed eggplant, spices and mix to combine
  4. Add agave, pomegranate molasses and water. Bring to a boil and simmer for 20 minutes
  5. Before serving mix in fresh pomegranate seeds garnish with parsley or basil
