- Granita:
- 2 cups carrot juice
- 1 cup coconut water
- 2 tbsp fresh squeezed lime juice
- 1 tbsp grated ginger
- Pinch of salt
- Topping:
- 1 english cucumber, diced small
- 3 tbsp fresh squeezed lime juice
- 1/8 tsp salt
Instructions
- Combine all the granita ingredients in a large bowl and mix well. Pour into a square 8 x 8 glass dish
- Place it in the freezer, mixing well every 30 minutes. Once it starts to freeze,scrape the ice. Repeat the process for 2- 3 hours
- In the meantime, combine the topping ingredients in a bowl and refrigerate until ready to use
- Top granite with cucumber topping right before serving
