Description

Made with supefoods, these date balls  are just the kind of nutrient-packed,  vegan, and gluten-free snack you need to energize your day.  


Ingredients

FOR THE DATE BALLS

  • 1/2 cup Goji Berries, if you can't find them replace them with dried cranberries
  • 4 tbsp orange juice
  • 4 tbsp hot water
  • 1/2 cup dried sour cherries
  • 5 large Medjool dates, pitted or 10 smaller dates, pitted
  • 2 tbsp coconut oil, at room temperature
  • 2 tbsp unsweetened almond milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 2 tbsp raw hemp seeds
  • 1 tbsp chia seeds
  • 2 tbsp raw cocoa nibs
  • 1/4 cup chopped walnuts or pecans
  • 3/4 cup almond flour, cashew flour or any other nut flour
  • CHOCOLATE DRIZZLE AND COATING
  • 1/4 cup dark chocolate chips
  • 1 tsp coconut oil
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Soak goji berries in orange juice and water until softened, about 5 minutes. Drain and discard the liquid. If you are using dried cranberries, you don't need to soak them. 
  2. Combine the soaked goji berries, cherries, dates, coconut oil, and almond milk in a food processor. Pulse a few times to form a rough paste.
  3. Add unsweetened cocoa powder and salt and pulse again until well combined. Transfer to a bowl.
  4. Add hemp seeds, chia, cocoa nibs, walnuts, and almond flour. Mix well using a spatula or your hands. Refrigerate for 15 minutes.
  5. Working with approximately 1 tablespoon at a time, form the truffles and place them in the freezer while you prepare the drizzle. It helps to use an ice cream scoop to form the balls.
  6. To make the drizzle, combine chocolate chips and coconut oil in a bowl, and melt in the microwave at 20-second increments, stirring after each 20 seconds.
  7. Roll the truffles in unsweetened cocoa powder and drizzle with melted chocolate

Notes

  1. If you want to serve them as a boozy dessert you can replace the orange juice with Whiskey or Dark Rum.
  2. If the dates you are using seem a little dry, soak them in orange juice like the goji berries
