- 3 ripe Barlett pears, cored and diced
- 2 tsp maple syrup
- 1 tsp lemon juice
- 1 tsp fresh grated ginger
- 1/2 tsp vanilla extract
- For the topping:
- 1/2 cup oats
- 1/2 cup almond meal
- 1 tsp cinnamon
- 3 tbsp coconut oil, melted
- 3 tsp maple syrup
Instructions
- Preheat oven to 375F. Grease 4 6-ounce ramekins with coconut oil (you can also use cooking spray)
- Combined diced pears, 2 teaspoons of maple syrup, lemon juice and ginger in a medium size bowl and toss well
- In a separate bowl, combine all the topping ingredients. Mix well using a fork or your fingers
- Fill the ramekins with the diced pears and sprinkle the topping on top. Bake for 18 to 20 minutes
