  1. Pre-heat oven to 375F
  2. In a large bowl, combine oats, coconut sugar, coconut oil and cinnamon and mix well. Set aside 1/3 cup of the mixture
  3. Cut the top of the apples and with a spoon or a melon baller, scoop out and discard the core. Also, carefully scoop out as much of the flesh of the apple as you can, but making sure you leave some on the sides and bottom of the apple
  4. Chop the apple flesh and add it to the oats mixture. Mix well and stuff the inside of the apples
  5. Top with the reserved oat mixture
  6. Arrange the stuffed apples in a baking dish. Bake for 20-25 minutes or until the apples are slightly tender
  7. Top with your favorite ice-cream or whipped topping if desired.
