Scale
- 24 soft medjool dates
- 1 cup peanut butter, tahini, or almond butter
- 1 cup chopped dark chocolate or dark chocolate chips. See Note 2
- Topping: pistachios, almonds, pecans, peanuts or sesame seeds
- Flaky salt
Instructions
- Line a baking sheet with parchment paper.
- Using a sharp pairing knife, split the dates in half leaving the two halves attached. Remove the pit, and press the dates against the parchment paper with your fingers or the bottom of a drinking glass.
- Spread peanut butter, tahini, or almond butter.
- Melt chocolate using a double boiler or a microwave in 20-second increments.
- Spread melted chocolate on the nut butter or tahini.
- Sprinkle your nut of choice and salt.
- Place the bark in the freezer to set, once it’s frozen cut it into bite-size pieces. See note 3
- Store in the freezer.
Notes
- Dates are a natural product, when removing the pit, inspect the dates for any bugs or worms. If the interior of the date has a black coating discard the date. It's uncommon to find bugs or a black inside, but it happens sometimes.
- We recommend a chocolate with a minimum of 70% cocoa.
- The bark will set in 2 hours in the freezer.
- Store bark in the freezer or refrigerator.
- Replace peanut butter with almond butter or cashew butter. If you want to keep it nut-free use sunflower butter or tahini and top with pumpkin seeds (pepitas) and sesame seeds.
