Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup coconut oil, softened
  • 1/3 cup smooth all-natural peanut butter
  • 1/4 cup brown sugar
  • 2 tbsp maple syrup
  • 1/2 cup mini chocolate chips

Instructions

  1. Line a large baking sheet with parchment paper
  2. Combine flour, cocoa powder, baking soda, and salt in a small bowl. Set aside
  3. In a large bowl place coconut oil, peanut butter, sugar, and maple syrup, and using a stand-up mixer or hand-held mixer beat together at medium speed, 3-5 minutes until creamy.
  4. Reduce speed and slowly add flour mixture and continue beating until well incorporated. Fold in mini chocolate chips and refrigerate the dough for 15 minutes.
  5. In the meantime, preheat the oven to 375ºF
  6. Working with 1 1/2 tablespoon at a time (we like to use an ice cream scoop), scoop 12 cookies onto the lined baking sheet. Lightly flatten them using the palm of your hand
  7. Bake for 10 minutes and let them cool completely before serving
