- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup coconut oil, softened
- 1/3 cup smooth all-natural peanut butter
- 1/4 cup brown sugar
- 2 tbsp maple syrup
- 1/2 cup mini chocolate chips
Instructions
- Line a large baking sheet with parchment paper
- Combine flour, cocoa powder, baking soda, and salt in a small bowl. Set aside
- In a large bowl place coconut oil, peanut butter, sugar, and maple syrup, and using a stand-up mixer or hand-held mixer beat together at medium speed, 3-5 minutes until creamy.
- Reduce speed and slowly add flour mixture and continue beating until well incorporated. Fold in mini chocolate chips and refrigerate the dough for 15 minutes.
- In the meantime, preheat the oven to 375ºF
- Working with 1 1/2 tablespoon at a time (we like to use an ice cream scoop), scoop 12 cookies onto the lined baking sheet. Lightly flatten them using the palm of your hand
- Bake for 10 minutes and let them cool completely before serving
