Description
Spicy, almost guilt free, Buffalo cauliflower "wings" with a creamy blue cheese sauce, great appetizer for the "Big Game"

- 1 medium to large cauliflower head, cut into small florets ( about 7-8 cups)
- 2/3 cup flour
- 2 tsp corn starch
- 2/3 cup water
- 1/2 cup store bought buffalo wing sauce
- For the Blue Marble Sauce
- 2 tbsp butter
- 2 tbsp four
- 3.5 oz ounces Sincerely Brigitte Blue Marble Cheese, cut into small cubes
- 3/4 cup milk
- 1/8 tsp salt
Instructions
- Pre-heat oven to 400F. Line a large baking sheet with parchment paper
- In a large bowl whisk together flour, corn starch and water until smooth (make sure there aren't any lumps). Add cauliflower florets and toss until well coated
- Transfer cauliflower to the line baking sheet, coat generously with cooking spray and bake for 25 minutes
- Heat buffalo sauce in a small sauce pan and keep it warm
- When the cauliflower is cooked, transfer it to a large bowl and pour buffalo sauce over it. Toss until well coated. Bring the temperature of the oven up to 450F
- Return the cauliflower to the baking sheet and bake at 450F for 7 minutes
- While cauliflower is baking, prepare the cheese sauce.
- In a small sauce pan melt butter over low heat. Add flour, whisking well until it starts to brown slightly (it should start to look golden brown) . Slowly add milk, whisking constantly. Add cheese and continue cooking until sauce has thickened and cheese is melted. Serve warm.
