Beet Salad Recipe with Feta Cheese and Pistachios

Description

Just look at this gorgeous beet salad recipe with feta and pistachios. It is a feast for your eyes as well as your tastebuds.


Ingredients

Units Scale
  • 2 medium beets cooked. They can be roasted, boiled, or store-bought - See Note 1
  • 1/4 cup roasted pistachios, chopped
  • 1/4 cup crumbled feta cheese
  • Salt, pepper, extra virgin olive oil, and a squeeze of lemon to taste
  • 1/4 cup microgreens

Instructions

  1. Using a mandoline thinly slice the beets, you can cut them by hand, but they won't be as thin.
  2. Place the beet slices on a serving plate, sprinkle pistachios  and feta cheese
  3. Season with salt, pepper, olive oil, and lemon to taste
  4. Add microgreens on top.
