Description
Our creamy green avocado cilantro dressing is perfect for dressing up cooked vegetables, salads, beans and tacos and takes roasted vegetables like our Chili Roasted Carrots to a whole new level.
Ingredients

- 2 cups packed cilantro leaves
- 1 large Hass avocado
- 4 tbsp freshly squeezed lemon or lime juice
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/4-1/2 cup water
- 1 tbsp Extra Virgin Olive Oil
Instructions
- Cut avocado in half, carefully remove the pit and remove the skin
- Put avocado, cilantro, lemon or lime juice, salt, cumin, olive oil and 1/4 cup water in a food processor or blender
- Blend until smooth and creamy. Add more water to achieve desired consistency.
- Store in a container in the fridge
