Not a vegan? Just add your favorite protein! But just give this vegan dinner meal plan a try, you may be surprised. All you have to do is shop over the weekend, do a little be of prep on Sunday, and you'll be all set for the week. You'll come home every evening and have everything you need to prepare a nutritious and filling dinner.

Chana Masala over Celeriac Puree
Ingredients List

- 1 medium onion, diced small
- 3 large garlic cloves, minced
- 1 ½" piece of fresh ginger, grated
- 1 large celeriac (celery root)
Pantry Items:
- 2-15 oz cans of chickpeas rinsed an drained
- ½ teaspoon turmeric
- 1 teaspoon salt
- 1 ½ teaspoon garam masala ( for a homemade recipe click here) (coriander, cumin, turmeric, red pepper flakes, cinnamon, black pepper, cardamom)
- 1 tablespoon extra virgin olive oil
- â…“ cup raw cashews + 1 cup boiling water
- 1 teaspoon salt
- â…› teaspoon pepper
Chipotle Hummus and Roasted Vegetable Tacos

- 1 ½ cups frozen pearl onions or 2 medium onions, chopped
- 2 large zucchini, chopped
- 2 red peppers, chopped
- Optional toppings: diced avocado, chopped cilantro, corn salsa

- 1 teaspoon dry oregano
- ½ teaspoon salt
- 6 tortillas (here we used low carb tortillas, but choose your favorite kind)

- ½ to ¾ teaspoon salt, to taste

- 2 lbs frozen chopped spinach, thawed
- 1 cup unsweetened non-dairy milk
- ¼ teaspoon salt, or to taste
- ¼ teaspoon black pepper (optional)
- ½ to ¾ cup vegan shredded cheese (or dairy, if you are not vegan)

Nice work on the meal plan and the shopping list! I'll be making some of the suggestions, that is certain! I have a question: where is the recipe for the channa masala with celeriac puree, the link takes me to a recipe for homemade garam masala? I would very much like to attempt that one. Also, for those who need to prep, I can't find any prepping ahead instructions. It would be helpful to have some make-ahead tips. Thank you!
