Cauliflower Rice Stuffing

Ingredients
- 1 cup fresh basil
- ½ cup fresh mint
- 1 tbsp fresh thyme
- 2 tsp dry rosemary
- 1 clove garlic
- 1 tablespoon extra virgin olive oil
- 1lb cauliflower rice
- ½ tsp onion powder
- ¼ tsp salt
- â…› tsp black pepper
- ½ cup pecans, chopped
- ½ cup dried cranberries
- 2 tbsp liquid aminos or tamari
- zest of 1 lemon
Instructions
- Combine basil, mint, thyme, rosemary and garlic in the food processor. Pulse until it forms a paste
- Heat olive oil in a large non stick skillet. Add the herbs and garlic and cook over medium heat for 1 minute. Add cauliflower, onion powder, salt and pepper and toss well. Cook for another 5 minutes, tossing often
- Add pecans and cranberries, toss well and cook for another 5 minutes
- Add liquid aminos or tamari and lemon zest, toss well and continue cooking for 2 more minutes. Serve warm

What is shown does not reflect what is written in the recipe. All the greens in the recipe are ground into a paste and then cooked. The photo shows a dressing with bits of green leafy material. So what is the green leafy material? Does this in any way taste similar to a conventional bread stuffing? Looks interesting.

This recipe is my new favorite way to eat cauliflower. So delicious!! And it actually tastes like stuffing to me! can you actually stuff the turkey with this and can you leave out the thyme and rosemary and mint thanks

Hi Leah, leaving out the thyme rosemary and mint will make the cauliflower stuffing blend, so try to substitute with other herbs and spices. We think this stuffing may get too mushy since it cooks really fast, so we would recommned serving it on the side.
