Description
Taste the sweetness of this newer winter squash variety. Honeynut squash roasted with maple syrup and brown sugar is super simple to make and incredibly delicious.
Ingredients

- 2 Honeynut squash, about 6 sliced cups
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp pure maple syrup
- 1 tbsp brown sugar
- Optional garnishes: pomegranate seeds, candied pecans and microgreeens
Instructions
- Preheat oven to 400ºF - Line a large baking sheet with parchment paper
- Cut off the stem of the Honeynut squash, peel them, cut them in half vertically, scoop out the seed, and slice them into 1/4" slices.
- Place the Honeynut slices into a bowl, and add olive oil, salt and pepper. Mix well so all the slices are coated with the oil. See note 1
- Place the Honeynut squash slices in a single layer on the prepared baking sheet. Bake for 20 minutes. Take the baking sheet out of the oven drizzle maple syrup and sprinkle brown sugar. Return the baking sheet to the oven for an additional 1o minutes or until the squash is soft and slightly darker. See note 1
Notes
- Don't add the maple syrup and the brown sugar before the first bake, they will burn before the squash is tender.
