Frozen Chocolate & Hemp Brownie Bites (Vegan & Gluten Free!)
They say there’s a first time for everything. It’s inevitable. It’s part of the process. It’s life. Some experiences are good and others, not so much. Some are memorable and some are absolutely meaningless. Some catch you by surprise and some you know, for sure, they’ll come sooner or later. And even when you don’t look forward to them, sometimes they are not as bad as you think they’ll be.
For me, that happened last week: my 7-year-old’s very first sleepover.
I knew it was a matter of time before he would ask to have one. Why I was dreading that moment so much, I’m not quite sure. But I was. Maybe I’m way too overprotective. Or maybe I worry too much. Or maybe it made me realize that my little boy isn’t so “little” anymore. Maybe all of the above.
Either way, the thing is, I’m talking about a kid who has never (and by never I mean NEVER) had a babysitter, other than my sister or his grandmother. I’m talking about a kid who just recently started going on play dates and staying there by himself. And now all of the sudden, he wants to spend the night away from home? Na-uh.
But after lots and lots of begging on his part, I let him go.
I tried to look like it wasn't a big deal, but I have to admit, I was nervous. Very nervous. I had my phone glued to my ear from the second I dropped him off, expecting him to call me in the middle of the night, asking me to pick him up...
But the call never came.
I was happy and relieved and proud, all at the same time. And the best part, it was over. That was it. Got the first time out of the way and it ended up being way better than expected. Phew….
Now, moving on...
Frozen brownies bites. Never made them before. Never had them before. Another successful first timer. Definitely less stressful and less nerve-racking. Super easy and fast to make. Slightly sweet and refreshing. Simply awesome 🙂

Frozen Chocolate & Hemp Brownie Bites

Description
Super easy and fast to make frozen chocolate brownie bites. Slightly sweet and refreshing. Simply awesome. A perfect little grab and go brownie bite that you will not feel guilty about.
Ingredients
- ¼ cup raw shelled hemp seeds (here we used Nutiva)
- 1 tsp sugar
- 3 tbsp chia seeds or ground flax seeds
- ½ cup unsweetened vanilla hemp milk
- ⅔ cup + 2 tablespoon bittersweet chocolate chips ( We used Enjoy Life)
- 1 ½ oz unsweetened chocolate
- 3 tbsp unsweetened cocoa powder
- 4 tbsp coconut oil (here we used Nutiva)
- 2 tsp natural vanilla extract
- ¼ cup coconut flour
Instructions
- Combine hemp seeds with 1 teaspoon sugar in a non stick pan. Cook at medium heat for about 5 minutes, until they start to brown, stirring occasionally so they don't burn. Set aside to cool
- Mix hemp milk and chia or ground flax seeds in a small bowl and set aside
- In a large microwave safe bowl, melt together ⅔ cup chocolate chips, unsweetened chocolate, cocoa powder and coconut oil. Once it's completely melted, mix well, add vanilla extract, chia mixture, coconut flour, hemp seeds and 2 tablespoons of chocolate chips. Mix until all the ingredients are incorporated
- Spoon mixture into a silicone mini brownie mold and place in the freezer until it hardens (this usually takes about 45 minutes to an hour). Thaw for 2-3 minutes before serving
Notes
If you don't have a silicone mold, you can use a mini muffin tin lined with mini muffin liners. For a warm, gooey treat, spoon batter into greased ramekins and bake at 350F for 8-10 minutes

When you say unsweetned chocolate do you mean bars, liquid or what else?????

You can find unsweetened chocolate bars in the baking aisle at the grocery store. It's basically dark chocolate that has no sugar added, so it isn't sweet. It "intensifies" the chocolate flavor 🙂

As someone who has been known to eat a frozen brownies straight out of the freezer I am intrigued by a recipe where that is how you are supposed to eat them! I also love the coffee ice cubes in the drink!
